  • Check out this easy yuca recipe. Yuca is a popular root that makes a nice change from your average potato dish. Me and CG have been cooking up yuca with garlic and onion for years, inspired by our favorite Cuban restaurants in Florida. The combo of yuca, garlic, onion, and cumin will knock your socks off, so check out the video and give this yuca recipe a try.

Ingredients for this Cuban-Inspired Yuca Recipe
    YUCA (about 1 lb.)
    1 Lg ONION (diced)
    5-10 cloves GARLIC (finely chopped)
OIL for sauteing the onion and garlic
    RED PEPPER FLAKES to taste
    2-3 Tbsp CUMIN
    ½ cup OLIVE OIL
juice of 1 LEMON and zest
    SALT to taste
    CUMIN SEEDS (1 tsp, optional)
…I’ve got lots of yuca, so in the video I’m doubling this recipe
    How To Cook Yuca Recipe
Using a sharp knife, cut the yuca into manageable sizes and carefully cut away the outer skin of the yuca root. The skin is inedible and should be discarded.
Place yuca pieces into a pot of water and bring to a boil. Yuca should never be eaten uncooked.
Reduce heat and simmer 15-20 minutes or until yuca root can be pierced easily with a fork. Do not overcook!
Yuca pieces should not be mushy. Drain yuca and cool with water.
Remove fibrous stem from center of root and cut into 1 inch chunks.
    Heat oil in a skillet.
Add garlic and onion and let simmer for a several minutes.
Add red pepper flakes, cumin, and salt to taste.
    Add yuca.
Mix and allow all to simmer for 5 minutes. Give the yuca an occasional stir. Add a bit of water if needed, but not too much.
Remove from heat and add lemon juice and zest.
    And that's it!
Yucca is an excellent substitute for potato. It goes great with any meat entree, and makes a great vegetarian meal when paired with stuffed peppers and a crisp green salad.
Give this yuca recipe a try and let me know what you think, and bon appetit!
And if you wanna try out the stuffed peppers with yuca, check out this jalapeno poppers recipe as well

Cassava we enjoy with slighty salted fresh coconut with "onion sambol", put in the mortar onions 🌰 chilli flakes or fresh/dried whole chillies 🌶 as you wish with salt & lime drops now chop chop chop until it's well blended we also add dried fish 🐟 called "malidifish", this is very famous in Maldives 🇲🇻, check the flavour as u wish ... mmmm... sure you gonna adore it.. "Lunu miris or Katte sambol", we call it in Sri Lanka 🇱🇰 ♥

we do eat cassava raw with coconut or with salt lemon juice and powdered pepper in my country sometimes we fry, boil or cooked with coconut juice. With coconut you can use salt or sugar and vanilla essences or with cardamom for good aroma. We use leaves as vegetable and it sticks as fire for cooking

@@greg3498 maybe it's about the high calorie content of yuca and some anti nutrient.....it contains good fiber for gut but by processing it lessen the fiber....by heat vit c lessen already .minerals very minimal so its says when I read some nutritional value of yuca. But cooking it different way as vegetable or dessert the taste will be 👍.

Praveen Sujayakumar agree you don't peel them like that, the skin comes out easily with your hand. Also I may add that its best to cut the pieces in half and take the stem off (it comes out easily) before cooking. Also nice to fry when they are soft. Delicious with just a simple onion, garlic tomato sauce seasoned with herbs added once they have been boiled.

      OA,
Did you cook the fish separately? I'm from Kenya and the good thing about this recipe is that you can use whatever spices you want. I think a major part of using this recipe is knowing how long you need to boil the yuca. I just cooked this recipe for the first time today (very early in the morning). So I'll get to taste it during lunch or dinner (depending on when I get time). That's when I'll really know how it works for me. I'm going to be eating the yuca with a beans, peas, potato and beef stew which I cooked separately. Normally, I would eat this stew with ugali, an East African maize meal staple (if you google "ugali" there are numerous links that show you how to cook it). Ugali is a starch that is eaten with all kinds of dishes in Kenya and neighboring countries. If this yuca recipe works I'll be really excited for I'll have an alternate way of eating so many dishes that I cook.

It is mostly boiled like you did and eaten with vegetables or meat and fish. It can be cooked in an earth oven, fried as some viewers mentioned, with spices like potato wedges or curried as is done in our Indian community. It can also be grated and cooked then made into a desert with coconut milk or it can be grated and Cooke as porridge with milk added or coconut milk. You make it very similar to me but I don't add onions and not pepper. I add only garlic, cumin and curry. Also I cut the yuca in "french fries" shape to fry it. And I love how tasty it is with the garlic, cumin and curry (and salt obviously too don't forget salt).

You should buy a cleaver to cut hard items. If you lived next door, I'd give you one of the 4 cleavers I own. I rarely use a "chef's" knife, since it can't do anything better than a cleaver, except slice long noodles.

Well, with all the positive comments, I am definitely going to try yucca. I'll start a simplier dish. Hold the cumin til later. I so appreciate your simplified form of cooking in a modest kitchen. You prove we can prepare, cook, eat in modest surroundings. You are teaching an old dog new tricks. I dont have a CG, but I'll manage. A gal at church just lost lots of weight and recommended yucca, aloe and simple ancient foods she is using. Our forefathers were never fat. I'm looking forward to this new adventure in my old 79 year old body. Again, thanks for your commen sense basic recipes. Looks like fun!

I'm surprised how many places have fresh yuca...sometimes if you can't find it in the fesh produce, you can find yuca already cut and peeled in the frozen foods section (look in the International foods frozen area with the egg rolls and tamales)...I used to always buy frozen yuca when I lived in North Florida, 'cause it was the best price where I shopped
