There are many ways to mock up an engine install. For my 2J swap I just set the engine in the bay and used wood blocks and jack stands. Had the intake and exhaust manifold installed. And just evenly spaced it in the engine bay. Also set the engine back as far as it could go. I have half an inch before it hits the firewall. Marked the frame rails where I wanted the engine brackets welded to and removed everything. I had 5/8 slotted square washers welded onto the engine brackets so I could slide the engine back and forth to the best position.
