    Ingredients
    1/2 lb (225 g) salted codfish (boneless preferred)
    1 cup all-purpose flour
    1/4 cup water (or more if needed for consistency)
    1/4 cup chopped scallions (green onions)
    1/4 cup diced bell peppers (red and green for color)
    1 small onion, finely chopped
    1 small tomato, diced (optional)
    1-2 cloves garlic, minced
    1/2 tsp baking powder ( optional)
    1/2 tsp black pepper
    1/4 tsp Scotch bonnet pepper (or chili powder, adjust for heat)
    1 tsp thyme leaves (fresh or dried)
    Vegetable oil (for frying)
    Instructions
    1. Prepare the Saltfish
    Soak the salted codfish in water overnight, or boil it for about 20 minutes to remove excess salt. Drain, rinse, and flake the fish into small pieces, removing any bones or skin.
    2. Make the Batter
    In a large mixing bowl, combine the flour, baking powder, and black pepper.
    Gradually add water while mixing until you achieve a smooth, thick batter.
    Add the flaked saltfish, scallions, bell peppers, onion, garlic, thyme, and Scotch bonnet pepper (or chili powder). Stir until everything is evenly combined.
    3. Fry the Fritters
    Heat about 1/4 inch of vegetable oil in a frying pan over medium heat.
    Fry until golden brown and crispy on both sides (about 2-3 minutes per side).
    Remove and drain on paper towels.
    4. Serve
    Serve warm as a snack, appetizer, or breakfast item.
