    Yes in the Caribbean it's called Saltfish Accra where we use salted Cod fish that is boiled to release the excess salt and then strained, washed out and added to a batter. It's quite nice served with a tamarind or mango sauce and mainly used as street food or finger food/ hors d'oeuvres

    I know an Afghan lady who makes something very similar to this, but with red meat, or vegetables, like zucchini, potatoes, or some such. She calls it PaCowRa. For sauce she uses the classic Middle Eastern sauce.. yogurt, minced fresh mint and cucumbers, and salt. Could also add some minced hot peppers. Good stuff, specially as a hot summer afternoon snack 👍

      Indian cuisine has pakora, deep-fried fritters usually made with vegetables, and the yogurt mint dip you mention sounds like their raita.

      @@tutti3159 From what little history I know of that region, it’s probably the same exact thing. When the Mughal empire moved their capital from Afghanistan to India, of course they brought the whole culture with them, religion, food, language, attire, music…

    I make zucchini fritters a lot in the summer. I haven't thought of fish at all ! :)) I'll try it.

    I have an Italian Recipe for salt cod fritters, only real difference is in
    flaking the Cod (soak overnight and simmer for 3 min's, in water) chives and egg, flour
    flour and pepper with the flaked Cod (no Batter). Form into golfball size and either
    shallow fry or deep fry. The baic recipe seems common throughout coastal Europe...
    Will try the sauce!!!

    French Caribbean cuisine i like it have you ever tried French Guiana food before too French cuisine is so diverse and some of the most interesting foods come from the former french colonies

    This is amazing. I love the poaching method it makes my fish really tender and delicious. But if I’m not making fritters (and so no flaking) and I want to keep it whole and pour a sauce over it; how would you drain the water so the fish doesn’t fall apart? Just leave it in a strainer or something? 🤔

    What do you mean you can make batter wth out beer ? I cant do any thing with out beer .. I drive to the shops with beer , perhaps you get teh point ... Looks great i Australai we have a couple of white fish to do this with ..

    Strange that fresh coriander is used in french cuisine usually seed is used and i know about piment d espelette and the South American chillies used in French Creole cuisine i really would like to see such recipes too
