I made the almond flour pancakes this morning. They were really thick since I used cream, but I left them that way instead of thinning the batter. As low as my griddle would go without shutting off, 6 minutes on each side. Absolutely fabulous!!

Pancakes are one of my cravings and eating them keeps me away from donuts, etc. Going to have to double batch them because when I made them people just walked by and grabbed one because they were so good. Only had 4 left when it came time to serve.

I halved the first recipe but forgot to halve the almond milk. Augh! Determination won out, though. I rescued my pancakes (now crepes) by adding almond flour and oat fiber. My 13-yr-old grandson said, "they look funny but they taste normal." 😂 I'll do this again when I replenish my coconut flour supply. Tasted great!

If you like yogurt, you could heavily strain high fat yogurt (or ferment heavy cream yourself) though it likely won't be the same, as cream cheese often has stabilizers. You could add your own stabilizer?

Good thinking. It's probably worth trying it. If you make up a batch or smaller batch, you could have 2 cooking methods ready so that if it doesn't work you aren't going to waste the batter.
They do, but you can add a tiny bit of xanthan gum to give them a chequer texture so they're not as crumbly (my first almond powder keto pancake were also quite fragile). Some people also add wanthan gum to their chaffles (like the Keto Twins)! Edit: typo
I noticed at 3:54 min into the video she said "make sure to use blanched super-fine almond flour." I'm knew to using almond flour so I didn't know one from another. I just bought almond flour at Costco last week for the first time, and lucky me--- it's blanced super-fine!

I just madeKing Arthur Flours carb conscious pancake mix and I have to say it was disappointing. They came out very dense and “eggy” even though you don’t add eggs to the mix, just water. I tossed it and made bacon and eggs!
You should try googling for such recipe or test recipes yourself using baking powder, baking soda, and sweetener such as monkfruit (can also be omitted though they'll taste a bit salty... Though with some keto syrup on top of the pancakes, it's not so bad).

Madam you are one hell of a salesperson. I have tried a dozen of your recipes and hated most of them, this has nothing to do with your recipes. I’ve come to the conclusion that I must keep it basic, meat and vegetables. Although you enthusiasm, skill, and personality entice me to keep trying your low carb recipes. I’m sure there are many companies trying to crack the no carb real flour recipe and I’ll wait impatiently for that.

Since u take care of your health with Keto you should also look at the vegetable oil you used to cook with and replace that with lard.
With the cost of eggs rising out of site, it is time to make pancakes with something else to hold them together, like Xantham Gum.

Some keto pancakes I have tried had a strange “dissolve in your mouth texture “. If you know what I mean, do either of these get away from that?

Yes, mix the softened cream cheese first, then add the rest of the ingredients in. It will keep the cream cheese from getting lumpy.
