I made these pancakes just now, but I did not want to use the flower because I wanted to keep it keto, which is my lifestyle. So instead of the milk, I used a tablespoon of coconut oil and then I used a cup of almond flour. They added a teaspoon of coconut flour, mixed it all in came out delicious but I also added some vanilla. I did not add the salt because I don’t like the salt that’s already in cottage cheese and I have to say your recipe is wonderful. I just tweaked it up a little and it came out really good for those of you who are doing keto. Thank you for your hard work subscribed to your channel.❤️

INGREDIENTS 250 g (1 c.) cottage cheese 1 egg 70 g (1/2 c.) all-purpose flour 1 tsp baking powder 1/4 tsp salt 60 ml (1/4 c.)milk or alt milk 1/2 tsp Oil or butter for greasing the griddleoptional if using a non-stick griddle INSTRUCTIONS Combine cottage cheese, egg, and milk in a large measuring jug or blender. Blend until smooth, using a stick blender or regular blender. Add the dry ingredients and stir until just combined, being careful not to over mix. Allow the pancake batter to rest for 5-10 minutes. Meanwhile, preheat a nonstick griddle to 325F. Lightly grease the griddle (optional), and scoop the pancake batter onto the griddle. If using a 1/2 cup measuring cup as a scoop, you should end up with 4 large pancakes. Allow the pancakes to cook on the first side until bubbles form on the surface-approximately 5 minutes. Flip the pancakes, and cook for another 3-5 minutes or until cooked through and golden brown on both sides. Notes: can use, bananas, pumpkin, shredded zucchini, ground oatmeal or almond flour, etc.

Love the non sweet cottage cheese idea, been hugely into it myself lately, I used to love it with just some halved grapes for a breakfast snack. I used to make Nigella Lawson's ricotta pancakes with lemon zest, they were so airy and custardy, but cottage cheese is cheaper haha so I will try that next!!

I've been making a similar version, but with no milk of any kind. In find the cottage cheese provides all the needed moisture. I put a little sugar in the batter, not much, on the theory that it helps with color. I eat mine with apricot jam. I can't convince anyone to try them that way but apricot jam is great topping!

Here in NJ, the average cost is $4 for a two cup container. Nuts! These pancakes might be great - but they're not inexpensive. Let's hope for better prices after Trump is elected next week.

Do not use regular flour! Use oatmeal...I grind mine in my coffee grinder!
oats cause inflammation, not good id you have arthritis or RA.

Dry ingredients are often measured in weights (hence grams) rather than volume (as in cups).
