I think you should try the cottage cheese Chaffles using only two TBSP egg whites..........and perhaps a quarter tsp or half tsp Xanthum gum. It should make the chaffle mixture less wet and thin. Just a suggestion.
When I was a little girl, my mother would put cottage cheese on a piece of toast with cinnamon/sugar and put it in the oven to heat it up, it was almost like a cheese danish. I haven't had that since I was little, many moons ago and I would love to see you try that with the cottage cheese. Thank you for always trying new things for us to put into our keto arsenal. Have you tried the taco chaffle? They put cheese, taco meat then top with cheese and cook it in the waffle maker. fold it like a taco shell and put taco toppings in the middle.
Hi Ladies! Based on your cottage cheese chips video (loved it) here’s how I modified it. In a silicone baking cup, minimally cover bottom with shredded cheddar cheese Add sprinkle of rosemary Add tablespoon of cottage cheese Add sprinkle Everything but the Bagel seasoning Put in microwave with another cup as a top Microwave for about 2 minutes and 20 seconds Let cool Makes a GREAT cracker!!
I use cottage cheese instead of ricotta when I make low Carb Lasagna. I also season it really savory with smoked paprika, onion powder, garlic powder, cracked black pepper, and tabasco sauce and eat it on romain lettuce, cool and spicy snack.

I actually found A WHIPPED COTTAGE CHEESE in my local Kroger grocery store, yesterday. So the curds are all blended and whipped already…😯😉👏🏼👍🏼🥳 It was the Kroger brand, right next to the regular small curd cottage cheese. This is definitely NOT Keto. But, I was introduced to cottage cheese years ago in a Broccoli Cornbread recipe. It consists of a box of Jiffy cornbread mix, chopped broccoli, chopped onion, cottage cheese, egg & butter. Added cheese is optional. I was amazed the cottage cheese disappeared!! You mentioned using low carb pancake mix as a breading, I am intrigued. 🤔 I started saving the heals and stale slices of keto bread, dehydrating them and blending them in the food processor for bread crumbs. Then when it’s time to dredge I mix in Parmesan to cut the carbs. It’s more work, but I make a lot all at once, and it keeps for a long time in an airtight container.

I've started premixing my chaffle mix - one part keto wheat flour, one part almond flour, 1 tsp baking powder per cup of dry mix. To make them, I add a cup of cheese, one egg, and half a cup of mix for six waffles. They're really good with cheddar, too!

Chaffles - I have found that cheddar cheese sticks more than mozzarella even with spray. Consider putting a combined cheddar / mozzarella cheese instead of cheddar on it's own. With the combo, you will probably be able to skip the spray.
I might try this. I saw the video on tiktok. I never spray. my dash but I will try. One tip she did teach me was to put the dash on a plate. This is a good idea since my dash sometimes over flows.

Some batters you absolutely cannot open the waffle maker before it's ready, or else it ruins it completely. hehe. I wonder if that was part of the problem. If you tugg too early (even to check it) that can disrupt the outcome as well. hehe.
Maybe try mixing in the cheese. It seems to be separating the batter from the cheese layers. If the cheese is mixed in maybe the cheese will hold together better. Just a thought 😊
I can’t find the recipe, but in the old Atkins diet days that book had a recipe for cottage cheese pancakes. I think it was just egg and cottage cheese and they came out thin like crepes, very tasty. I will look for the book and recipe.

Catalina crunch is great. I've been eating it for a while now the cinnamon toast. With it being heavy protein you don't need to eat as much. Also pretty good just to snack on by itself. I've been buying for the last three and a half months. I did a similar recipe for the chapel and it was a total nightmare I think I ruined the nonstick on it

For some reason cottage cheese has been difficult to get, so I’ve been using ricotta, it’s seems to be lower in carbs and I think it works as well.
