I just made this for breakfast and it was absolutely delicious. I didn't have any green onions (scallions) so I used white onion. Then, to dress it up for added flavor and visual appeal, added a couple of slices of tomato. Again yummy, thanks!
I love the "cooking for one" video concept from you, because it's so nice to see what you crave and want to make for yourself, and its always easy to double or triple the recipe for more ppl :) Pretty brilliant to pout the egg over the shredded potatoes, can't believe I've never thought of doing that haha, thank you for another great video :)
I’m obsessed with potatoes, black pepper & cheese if I’m being honest, especially with eggs lol & love the simple recipes I have a hard time not making enough food for an army & it’s just two of us, leftover are great but learning how to cook smaller is awesome great simple ideas & easy recipes thanks again for sharing!
That looks really good!! My grandmother use to make an egg and potato pie with French fried potatoes instead of hash browns!! It was one of my favorite meals!! I can't wait to try this.....I love hash browns!!
This is so simple and easy! That’s exactly why I LOVE watching your videos❤❤❤ you’re always cooking food that isn’t difficult to make and I mostly always have the ingredients in the pantry!!! You’re awesome 🎉🎉🎉 I’m going to make this as a late night snack.
Yes please, keep them coming ! I looove this idea of shredding the potatoes 🥔! This one comes in handy for my B,L,D! I’m going to add a little more protein to hit my daily intake of protein 👍 Thank you so much for such a great recipe!!🥔💓
I really love this. I too could eat eggs and potato 3X a day7days a week. It’s often difficult to find one person recipes but this is perfect. No need to fuss with leftovers. Quick and easy. Thanks so much. I’m looking forward to more single person recipes. Thank you ❤
My mom used to make something like this. She called it Kitchen Sink Eggs, because she would throw in whatever we had. It usually had potato, chicken, green onion and yellow onion, but could have cabbage, zucchini, broccoli, bok choy, spinach - whatever veggies we had in the house. The potatoes would get cooked in butter for a bit, then all the chopped veggies would get added, the heat would go way up to start caramelizing them, then when the eggs and little milk went in the heat would get turned down and a lid would go on it. When the bottom got browned she's flip it, add cheese to the top, cover it and wait for the bottom to brown. Oh man, it was one of my childhood favorites.
I make this for my kids' breakfast on a fairly regular basis. The only change is some shredded cheddar cheese sprinkled over everything with about a minute to go cooking.
Cooking for one is difficult for a lot of people. I'm one of them. You could make a name for yourself if you focused on the single persons meals. Great recipe. Can't wait to try it.
Yum! Substituting zucchini for the potato is good too. It's also good to fry diced leftover baked potato & add egg & onion. I love these dishes with siracha ketchup. Thx Mamá
We always appreciate the way you give us options for substituting various items for different variations! This approach also encourages us to be creative. Thank you!
I too love potatoes and eggs! This looks great the way you made it. I'd include a little bacon or sausage and roll up some extra sharp cheddar with it. Thx for the great idea!
SISTER YUMMMM ! You know one of my favorite comfort food combos in a pretty way! I never shredded mine in this dish, just potato, onion and egg at the end , but this is excellent. Plus I love green onion even more than sweet. This could possibly be made with cabbage and cheese maybe?? Think? That’s an Irish thing… like Irish colcannon?😀
I have found if you just let the potatoes cook for at least 7 minutes or so undisturbed before turning them over or mixing them, they get much crisper which I think adds more flavor with the egg.
Thank you for making this video. The possible variations are numerous to keep it interesting. I have never added potatoes to my omelettes but it would make it more filling. ☺💖🌹🇦🇺
I make this for breakfast two or three times a week. My wife and I love it. BUT! I'm old and the older I get the more lazy I get. I buy a bag of frozen biscuits and put some in the toaster oven. Mmmm...biscuits and eggs are hard to beat. I buy a bag of frozen hashbrowns and when I'm making this I throw a handful of them into the skillet and let them get done. I also go to Sam's and buy a bag of bacon that is cooked and crumbled. So, a hand full of this bacon goes into the skillet as well. For the two of us, I scramble five eggs and pour them onto the potatoes and bacon. I seldom fix this for lunch, but breakfast is my favorite meal and this works great for breakfast. Quick and easy -- no peeling or grating potatoes or frying bacon. If you're cooking for one, only use two eggs and smaller hands full of hash browns and bacon. Little to wash -- skillet, two plates, a spatula, a couple forks and a coffee cup.
♥️Thank you for the suggestions of adding other veggies. I added shredded carrots and cabbage and chopped additional white onion to mine along with the potatoes, green onions and eggs. So good and filling! I topped mine with sour cream. It’s a great launching pad for creative and a quick meal ✌🏾🥰
I also love potatoes and eggs which I had for breakfast this am. Was out of fresh potatoes so I thawed some tater tots chopped up and mixed in with eggs. No scallions but had chives. Just delicious.
I have been adding two egg yolks to refrigerated "Simply Potatoes" (I think that is the brand), along with salt, pepper, garlic and onion powder, and a few tbs of olive oil. Mix it thoroughly and fry it (I use med-low heat for 6 min on the first side and 5 on the other). It is also great to melt some shredded cheese over it too. It comes out like nicely crisp outside and soft inside hash browns. I squeeze the potatoes in a tea towel but I'd like to try washing to remove the starch as you suggest.
I need some more solo recipes, please

And hopefully you have incredible genetics and will survive eating all that pre prepared food
Love the concept, but I am a huge crispy hash brown fan. So I would definitely crisp my potatoes up before pouring the eggs on top.
I agree with you on that, my thoughts were that I would flip the potatoes over to brown on both sides
@@DCB938 great minds think alike!
Looks so good
Looks good..I will add shredded cheese.
Green onions and scallion aren't the same thing, although people often substitute one for the other. Looks delicious. I'll try it soon
