Don’t have Buttermilk? Easy to substitute, just add 1 Tablespoon lemon juice or White Vinegar to 1 cup of milk, stir, wait 5 minutes and voilá. Close enough substitute and saves throwing away the unused buttermilk that you bought just for this but never used it all. Voice of experience. Also need to remember that if you change a recipe from milk to buttermilk then you need to balance the recipe with baking powder to keep the pH correct because of the added acid the buttermilk gave it. This will allow the pancake to rise completely
When I was cooking for my nieces and nephews while on leave from the Army. I used to put chocolate or strawberry Quick syrup and cut about 1/3 of the sugar from the recipe. I was the best Uncle ever. Just an idea to make life taster. Big fan, keep up the good work.

You don't have to stop what u are doing ,if u prefer buttermilk just add lemon/lime juice or even vinegar to regular milk .. I would have added more buttermilk to thin it out rather than add more mix but I'm no expert 😉 keep em coming my man !!

He told me next time I make Krusteaz pancakes, substitute the water with beer. I did and it was the best pancakes I have ever had. Tastes just like sourdough flat jack. You have to try it.
The muffin mix tip is gold really makes it better. On your temp try leap frogging your burners. Try Med , off, low, and off. You're going to have to play with it to get what you want.

I wonder how much the thickness of the batter played in the softness of the pancake. Maybe do a test and use less milk for a thick batter, then a thin batter, and one somewhere in between. Then we could see.🥞
I very seldom make pancakes. I do buy buttermilk for fried chicken. My complaint is buttermilk has such a short shelf life, at least what I get from Kroger or Walmart. Oh, those do look scrumptious, either way.
So, the science guys say that for buttermilk to do it's magic you need baking powder to react with it. While you didn't use that directly some baking powder is included in the muffin mix so you got a smallish reaction. Slightly more baking powder in the final mixture and you might see a somewhat greater difference. Then, if you want to really get crazy (I don't work this hard) separate the egg yolk and white, whip the white, fold it in.......................all sorts of crazy things you can do. LOL

I just ordered a new blackstone griddle. I had a small two burner. I am hoping the four burner 36 has less cooler spots. but - that’s not the reason I need a new and bigger 😎🌈.

Buttermilk all the way. I will not eat pancakes or biscuits without buttermilk. Add a little baking soda to it. It takes you right to flavr`town instantly!
One day you will come across cream cheese flavored coffee Creamer and use it in pancakes. Maybe Cinnabon or Starbucks flavored creamers and you will never think about using buttermilk again.
The muffin mix makes the biggest difference...the buttermilk was a slight advantage.. If i had to pick between the buttermilk and muffin mix we would choose the muffin mix no doubt

You can buy buttermilk powder and rehydrate in water. Or add a bit of the powder to the milk,

I keep powdered buttermilk in my fridge. Mix in the dry. Then use milk. You can mix with milk and use to marinate chicken

See save a cup from your marinade and try it out..they freeze well as well
