Ingredients
3 cups all-purpose flour
¼ cup sugar
1 ½ teaspoons kosher salt
1 tablespoon baking powder
1 ½ teaspoons baking soda
3 eggs
2 ¼ cups whole milk
¼ cup vegetable oil
¼ cup apple cider vinegar
1 tablespoon vanilla extract
8 slices thick-cut bacon
Directions
1. In a large mixing bowl, combine the flour, sugar, salt, baking powder, and baking soda. Mix evenly.
2. In another large mixing bowl, whisk the eggs. Add the milk, vegetable oil, vinegar, and vanilla extract. Mix until well combined.
3. Add the wet ingredients to the dry ingredients bowl and gently mix with a spatula. Avoid overmixing, and it's okay if there are a few lumps. Once mixed, let the batter rest without stirring again.
4. While the pancake batter is resting, cook the bacon over medium heat until crispy. Remove the bacon from the griddle and drain it on paper towels.
5. Clear any bacon pieces from the griddle, preserving all the bacon fat. Evenly spread the bacon fat on the griddle and start making your pancakes. Adjust the size according to your preference. Cook for about 3 minutes per side or until they are golden and fluffy.
6. Serve the pancakes with unsalted butter, maple syrup, and bacon. Enjoy!

Bacon is cooked based on it's application. As a side, leave a little chew(mostly crunchy). More crispy for sandwhiches.
3 of those sized pancakes, just dark maple syrup, 4 strips of 7.5 bacon, cup of coffee. Great Sunday morning right there.

Just made some of these and my family loves them! I substituted the apple cider vinegar with rice vinegar and it still worked pretty well.

I always have Buttermilk on hand. How much Buttermilk should I use in place of your milk/vinegar mixture? Maybe 2 1/2 cups of buttermilk to equal the milk + vinegar amounts. Thanks for your help.
I would like to know also. We keep dry buttermilk on shelf and rehydrate what is needed.
I imagine, it would be the same as the milk measurement. He's only adding the vinegar to curdle the milk. It won't taste like buttermilk. I also use dry buttermilk and hydrate when needed.
Great idea on the dry buttermilk! My parents never used dry so I forgot that it existed. This is what I need for the frequency of my use.
One or two pancakes at most. Bacon 2 or 3, 5 is the absolute max.
My cheat meal is 6 eggs, 6 large pancakes, and 2 glasses of milk.
We use separate pork fat for pancakes. My best recipe is pancakes with yeast - much more fluffy. Thanks for video ❤

NOOOOOO! Buttermilk pancakes MUST have buttermilk! Milk and ACV are ONLY a worst case scenario, where no buttermilk is available. So, I don’t think you can claim they are “the very best buttermilk pancakes of your life”. Also, yes on the bacon grease, no on the sugar.
