Thank you so much for sharing some ideas on how to smoke a whole goat. I've been wanting to smoke one for a while, and this gives me just what I needed. I've got a goat farmer that I work with and I'll be getting one fresh off the farm hopefully this next Spring.

Being from south Texas you can find cabrito everywhere you can grill it, roast it, stew it, smoke it. But traditionally you skewer it and stand it next to a mesquite wood. Served with pico de Gallo 🥑 guacamole or avocados, spicy salsa an corn tortillas. Take the meat from the goat and put it in a tortilla with salt salsa an avocado or guacamole. I've been eating it this way since 1970. It's good with the silver skin.

So you can leave the silver skin on?

When cooking cabrito..the skin you cut off crisps really good when cooking. Also the kidneys always stay on when cooking. They taste good.

Nice Vid JB, I am cooking a Cabrito on New Years Eve in Argentina. I'll use a 50 gallon drum smoker and coals from my Parrilla. I don't know if I'll be able to find one of your injection things here in Mendoza Argentina but i like the spray concoction you used. I have cooked a few goats before but was basting, I'll go spray until the last hour. Thanks

Bruh, I raise goats…. I normally wait until they hit 60lbs before cooking one, but I’m definitely going to try this

Lamb is great ! I’d assume goat will be about the same. I’d eat lamb regularly if it were readily available when I wanted it! If it’s gamey like lamb the right herbs will take care of that business no problem

Love your videos, JB. Do you think you could prepare cabrito on a Weber 26" kettle? Thanks.

    • @JBsBBQ

I think it depends on the size. Plus you don’t want it too close to the heat source because it already a lean meat. I personally wouldn’t.
