      @@mamaandpapajoe Cury goat? Never had it. We've always done it live fire over pecan wood. But I say try it. Can't image that it would be anything but great, especially if someone with your skills cooks it.

    Grilled/BBQ cabrito was one of my dad's favorites! Looks fantastic! I'm partial to cabrito en sangre.

    Your marinade is very close to what I use for pork ribs or pork butt to make tamales.

    I applaud you sir..I would say though, at 45-120 I'd buy a metal cap with air ventilation to convect/smoke in your grill and douse the coals with water to finish off for like 2-3 hours, the end product will be SOOOOOO MUCH BETTER..trust

      @@mamaandpapajoe so I could not find a whole goat , I found chopped meat , so I used Chardonnay, Roasted On the Weber Garlic, A LOT .
      I used smoked poblano peppers an seeds
      Cilantro , splash of lime juice a little white vinegar, I am gonna cook indirectly on low for a bit an see how she goes
