I am a native North Carolinian and I will say that Sam Jones can simultaneously serve you some of the best Eastern style NC BBQ that you can find as well as the single worst piece of cornbread that you will ever eat. The dichotomy is truly remarkable.

I’m certain that Mr. Jones knows that Grady’s BBQ in Dudley, NC, 1 hour southwest of his flagship restaurant has been serving quality whole hog BBQ chopped WITH SKIN for going on 40 years now. But, there’s still a dividing line in the community and Mr. and Mrs. Grady are on the “other side” of it…
Why do some people have to bring race into everything, I know all about Grady's BBQ and there are lots of white that support their business, probably more than all the others.

I was raised in Eastern NC and have lived here all my life. This is the same barbecue I was raised on. I remember them cooking it in the ground but barely. Most had changed to a cooker and charcoal and now gas but Charcoal is better and wood is even better but also the most work. They do have good barbecue.
After seeing that family photo, im convinced the grandfather just cloned himself a couple of times to ensure the future of his business. Seriously though, this meat looks incredible. It's heartwarming to see such dedication to the craft.

No offense to these folks, but there are several backcountry BBQ families (not necessarily businesses) doing exactly what they do here... including the skin blistering.
