Great question! I just use parchment paper, it's nice because even with sauces that form a "bark" you can bend the parchment and pop the dehydrated stuff right off!
Oh yeah great question, my rule of thumb is 2x water for any dehydrated meal, so if it's 1cup of dried food it's 2cups water. It's so easy to add a little more water or boil a little off while cooking. However, if you're doing like a thermos soak method where the exact amount of water matters a lot more, then what I do is weigh the food before dehydrating and then again after, and then you know exactly how much water to add back in.

That's my own personal dehydrating journal, I keep track of the meals I make, and put in suggestions for next time
