LEARN HOW TO MAKE AN AMAZINGLY TASTY THAI STYLE PEANUT CURRY RECIPE TODAY!
LAY HO MA (how's it going in Cantonese)! Veggies are definitely not boring when they're colourful, abundant, and wrapped in a deliciously nutty gravy. Join me in this episode and learn how to make an extraordinary Thai style peanut curry recipe right at home! Let's begin
Ingredients:
1 red onion
150g broccoli
1/2 red bell pepper
6 baby corn
120g smoked tofu
drizzle of avocado oil
2 tbsp coconut oil
2 tbsp red curry paste ( • Vegan Panang Curry Rec... )
1/4 cup water
1 tbsp tamarind paste ( • How to use Tamarind Pa... )
3 tbsp peanut butter
1 1/2 tbsp soy sauce
1/2 tsp dark soy sauce
1 1/2 tbsp maple syrup
400ml canned coconut milk
3 tbsp roasted peanuts
lime wedges to serve
few sprigs cilantro
Directions:
1. Preheat the oven to 375F
2. Chop the red onion in half, then into quarters. Chop the broccoli and red bell pepper into bite sized pieces. Slice in half the baby corn and chop the smoked tofu into bite sized cubes
3. Transfer the veggies into a large mixing bowl and drizzle in some avocado oil. Toss the veggies and line them onto a baking tray lined with parchment paper. Spread out the veggies and bake in the oven for 15min
4. Heat up a sauté pan to medium heat. Add the coconut oil followed by the red curry paste. Fry the curry paste for about 1min
5. Add the water and give the pan a stir. Add the tamarind paste, peanut butter, soy sauce, dark soy sauce, and maple syrup. Give the pan a good stir
6. Add the coconut milk and give the pan a stir. Turn up the heat and bring to a boil. Then, turn the heat to medium low. Stir and simmer gently for about 5min
7. Transfer the veggies into the pan, turn the heat to medium, and give it a good stir. Let the curry simmer for about a minute while you prepare some crushed roasted peanuts
8. Plate the curry and garnish with the crushed peanuts, fresh lime juice, and fresh cilantro. Serve with freshly steamed rice!

You should experiment with soaked nuts and seeds for future recipes. Nuts and seeds contain chemicals that prevent them from being digested by animals. The only way to get rid of this is by sprouting (soaking it in water overnight), since it gives the nut/seed the illusion that it has been planted. Store bought roasted nuts/seeds don't usually have this process done to them.

I made this tonight for dinner using a Japanese sweet potato instead of corn and adding carrots. The sauce was spot on! I had already cooked quinoa so I served it with that instead of rice. Excellent!

I've been a fan of your channel for over a year now since a friend shared your one-pan lentil & rice curry. That recipe is remarkably similar to something i used to make a lot in 1988 when i lived in a one-room cabin on Saltspring Island & only had a bike for transport.
I made this peanut curry for the first time just last week & tonight is the 3rd time i've made it. Oh my! I made this yesterday, and we loved it! Leftovers tasted even better, though it was a little pasty after being refrigerated, so I thinned it with a little broth. It comes together very easy, and was quite tasty and nourishing. Thank you for another great recipe, it is a keeper!

Most recipes call for a neutral flavoured oil so as not to overpower the other ingredients 🙌🏻

It really does look good, Wil - it's trademark "party I'd like to attend" with those lovely colours and textures (and my imagination for the sense of taste). I live to eat (rather than eat to live), so something like this recipe is a real treat for me. I love peanuts! I cooked this dish using kuri squash from my garden, upo gourd, tofu and several other veggies from the grocery store. Brought it to a family gathering in San Jose, CA. It was a great hit! Left-overs were taken by the host family who has 2 small kids and an infant. They were ever so grateful. My husband suggested to serve this dish again at a bigger gathering out in Mendocino. This dish is travelin'! Thank you so much for de-mystifying this curry. I didn't think I had it in me to make a delicious curry!
