Cooked this twice now, my picky eater husband (who doesn't even like thai green curry), has requested I cook it again. Its better than any I've ordered from a restaurant!
Make your curry paste from scratch in a big batch and freeze it in smaller portions. It will retain like 90% of the flavour but is still a lot better than the store bought stuff. This way Thai Green Curry is an easy weekday meal (max 30 minutes)

great vid! love watching you both fun fact about the name เขียวหวาน (keaw wan) keaw is green and wan normally means sweet but in this context wan actually mean light/pale so kang keaw wan literally means pale green curry rather than sweet green curry as Marion mentioned that in Thailand this curry is usually pale/light green in colour hence the name
Excellent work. I've seen a trick with the pea egg plant, which is to cut about halfway into them, which allows the sauce flavour to penetrate and reduces that bitterness. Bit fiddly to do though.
That looks Simply AMAZING. I'll attempt to get all the ingredients and give it a go. I've never seen pea eggplants or those Limes and their leaves but I'll do my best to track some down. Thanks for an amazing recipe hope mine turns out as good as yours did.

Brave with the shrimp paste. Believe me, it's actually got better over the years and not as vile smelling as it used to be. My dad immigrated from Hong Kong to Canada in 50's and it used to come in bottles. He actually drop a bottle of the vile stuff in the airport while coming through immigration and it broke. Suffice to say...they weren't impressed. LOL Awesome video. Might have to try this.
Try making a Laing!! Recently tried some at my coworkers birthday party and it was heavenly. Rich and creamy with the saltiness of the fish coming through just right. And a bit of a kick to it. Please give it a try Andy!
I love it that your making your paste from scratch. I am not sure on a general basis that I would go to all that effort, especially when you can buy Mae Ploy Thai green curry paste which is damned good. But hey, well done as I am sure what your doing is more traditional/correct. I can’t say I have heard of those thai eggplants nor know where you might get them ?? I always instead use green beans or even snake beans. Ditto the limes used are not something I have come across. So of course there is always much to learn. Thankyou 😁👍
