  • In this video, Mr. Cast Iron demonstrates how to make pan fried potatoes and onions in a cast iron skillet. You could use olive oil but we are using bacon grease. Bacon grease gives it a very good flavor. This is an old country staple here in the Mid-South. Pan fried potatoes and onions can be eaten alone or they go well with beans and ham too!

    This just looks perfect Mike! You're absolutely right, that key to leave a lid off so those fried potatoes don't turn to mush... absolutely essential! And that bacon grease makes for such a wonderful cooking fat. You really don't need much, and can take advantage of the skillet's own non-stick quality to get everything perfectly crisped up. Beautifully done my friend!

    Mike I just discovered your channel. I'm a terrible cast iron nerd, the older the better. Let me quiz ya on the cast iron pans that look like ears of corn. The general answer is for cornbread and you could do that but they are really brownie pans. They make the best brownies you've ever eaten, crust on all sides. Preheat the pan just like for cornbread and if ya add nuts they will look like dog poop. That won't stop em from disappearing. lol

    Hey Mike, what an awesome video!!! So many great tips and tricks, great technique!! I have fried potatoes and onion in my cast iron every morning, along with 3 eggs, 2 pieces vege bacon and sometimes a piece of toast, either whole grain whole wheat, or potato bread along with my coffee. I use cold pressed virgin organic unrefined coconut oil to fry my taters n onion, and bacon, and then add some butter for the eggs, either over easy or scrambled, along with my coffee.
    Sometimes I add bell pepper, and sometimes I roll it all up in a flour tortilla, add shredded cheese and make a breakfast burrito.
    I do put some ketchup on the side, and I always put lots of home made salsa over the plate.

    This edition of your videos brought back really good memories. My daddy and I would go fishing. When it was time for lunch he’d start a fire and pull out a cast iron skillet. I didn’t know then what it was but I’ve figured it out. He always packed potatoes and onions in case we hadn’t caught any fish. He used lard since it keeps so well. Soon we’d share a lunch of fried potatoes and onions over an open fire.
    That was likely over 60+ years ago but I’ve never forgotten those lunches. Tried to make some recently for dinner. What a mess. Not the right skillet, covered the potatoes and all but burned the onions. Threw most of it out.
    Now that you’ve shown me the right way to cook them I’m getting my Lodge cast iron skillet and making them right. Thank you showing me the best way to make this meal. Has brought back a lot of memories. Especially daddy just rinsing the skillet in the lake. No soap, no scrub brush, and his young daughter watching and wondering how that skillet got so clean. Now I know. I’ve subscribed to your channel. Thanks again

    Foresure Mike fried potatoes are good any time of the year , that’s on my breakfast menu this morning , I bought a pack of bacon yesterday from a local butcher homemade , I’ll fry that up first then the potatoes with a couple eggs, thanks Mike have a good one .

    I like frying up potatoes and onions and bell peppers and sausage in my trusty old wagner iron pan. Cook them on my propane stove outside. People tend to complain when I fry food inside..... So me and my german shepherd dog watch the food cook. I usually season with lemon and herb / or lemon and pepper. I add Louisiana hot sauce once on the plate. Good eating.

    Hi buddy I’m a huge potato fan , I live in northern Canada we have long winters so potatoes are a main stable love potatoes and onions also good for the cast iron , I’ve made that mistake before putting to much grease then your potatoes are soggy thanks Mike love your videos.

    This looks wonderful. Can't wait to use the why do cast-iron still got a lot of research to do on it I no idea how much went into using one of these things.. thank you so much my big question when you wash it after cooking? You do not use Dawn or dishwashing liquid? You just wash it with hot water to keep the seasoning and then every so many months you do use dishwashing liquid with a scrubber? I'm getting frustrated and I haven't even used it LOL but I can't wait to learn how to

I'm 31 and I love the idea of my family or friends using my skillets when I'm gone.     Brown russet potatoes have higher starch content. I rinse russets before frying them. This promotes a nice brown crust. Red and White potatoes, I don't bother to do this with.

    My question is, I don’t save my bacon grease, I know my mom did, does butter work just as well for this particular recipe?

      Hey Laura, that's a great question, and I’m happy to hear this brought back some good memories! I probably should use butter, but I love my bacon, lol! But I’m gonna say you could use butter, but keep in mind that butter can burn at high temperatures. So if you decide to use butter, my suggestion would be to cook at a lower temperature and increase the cooking time to fry your desired color and doneness! Let me know how it works out for you, my friend!!? Ok!?

      @@MrCastIron I've never really been a ketchup fan, until recently. I really like Whataburger's ketchup. When I won that prize package on your channel from Papa Texas, he sent me some Spicy Whataburger Ketchup, but haven't tried it yet. We don't have Whataburger's here in Colorado. I miss them . But to answer your question, I like mustard and Hot Sauce. But I like that on just about everything. Lol. I also really enjoy fried potatoes and onions with just salt and pepper. 😁. But mostly like them on a big fork. 😃😎

    They should make a candle with the scent of fried potatoes and onions! I like to dice the potatoes, along with carrots, beets, onions and other root vegetables, coat with olive oil, season with Herbs de Provence, and roast in a cast iron pan in my 450F oven for 40 minutes. They get sweet and crisp. The stove isn't a greasy mess. And the cast iron gets seasoned at the same time.

    Hey Mike!
    My favorite thing for years now is breakfast hash on the weekends. I mostly follow your method here, though I use freezer section southern hash browns (diced potatoes), and cook those with onion, green bell pepper, and kielbasa. I add egg at the very end. I also use Lawry's seasoned salt for mine (essentially what you use here, just add paprika... SO GOOD).
    I do recommend using a lid if you decide to crack the eggs over the top, just long enough to set the egg so you still have runny yolk. Truly decadent.
    That being said, I've been using non-stick up until this past week when I finally converted to cast iron. Do you have any recommendations for cooking frozen potatoes in cast iron? You strike me as preferring to stick with fresh potatoes, but figured I'd ask.

      That’s awesome! Welcome to the cast iron world! You wouldn’t need to do anything differently than what you’re doing in the other skillet. If anything, always preheat the cast iron and add a small amount of your favorite oil before adding the frozen vegetables. Let me know how it turns out for you, ok!?

      @@MrCastIron so far, I've used it twice for breakfast hash. It turned out pretty good! But I think the second time, based on your video I'm pretty sure I both overcrowded the pan and used a bit too much oil, so they were softer than I'd like.

      You may have to experiment with it, but if it were me, I’d put a tablespoon in about 12 ounces of water and drink it daily. Do some research on it and see if it helps you.

    Quick question. I've heard some say not to use metal utensils in cast iron. It seems as though that's false since I see you using them. Another question is, I have a fairly new skillet and we didn't know how to take care of it. I'm afraid we soaked water in it to try to losen up stuff that was stuck. Well then we scrubbed that and the sides have some bare metal areas. HELP! What can I do?

      Thanks for the great questions, Judy. Not to worry, though! You can use metal as long as you are not gouging into the skillet. On the season, that will fill back in over time as you continue cooking in it.

    i see you using bacon grease a lot I had a few questions:
    do you just pour the grease out of your skillet into that container after cooking bacon or is there more to it than that to get/save the grease?
    and if so, how long does that grease stay good for? do you have to keep it in the fridge or anything like that?
    what is that container anyway you are using for the grease? looks useful!

      Great questions, Mike, and thanks for asking them, my friend! The grease can is a way of straining the bits of food particles out and to store it. Bacon grease, when strained, lasts for months without having to put it in the freezer or refrigerator, although you could do that too!

    Agree, Mike. When you accidentally over cook your onion pieces it’s makes the dish not as good. Kinda like if you over cook the bacon pieces in with your Brussels sprouts. Not as good either. Good thing to bring up, Mike. Always on point

    I grew up in Minnesota, breakfast potato of choice was hashbrowns. What I knew
    to be grated potato patties lightly browned and heated through. BUT,
    Au contraire mon frere!!! A hashbrown ain't always a hashbrown. Found that out
    whilst traveling the country in the military. The winner of the worst hashbrowns EVAAA,
    was in a diner just outside of Jacksonville Florida, the recipe, very simple.
    1 coarsely chunked up potato
    1quart of 10w30 Quaker State
    Saute said potatoes for about an hour, or completely infused in said oil
    VOILA, Bon Appetit

    I could eat fried potatoes morning, noon, and night. I never get sick of them. But I use a different method to speed things up. I'm just offering this as FYI in case anyone wants to try my method, which I have used for several year. It works every time for me:
    1. Chop up the potatoes and place them in a microwave-safe bowl, covered in water. Parboil the potatoes in the microwave for 5 to 6 minutes on high until they're "almost cooked." Drain in a colander, shake, and remove as much water as possible.
    2. While the taters are microwaving, heat up your skillet on the stove (medium heat) and add your favorite oil (BTW, swine makes everything fine. Love bacon fat too.) When the skillet it up to heat and the potatoes are drained, add them to the skillet. Fry for about 10 minutes for an average batch of fried potatoes (a little longer if you like them extra crispy and extra brown).
    3. Raid the spice rack to flavor the potatoes, depending on your mood. Salt and pepper, of course, but don't be afraid of thyme, rosemary, basil, parsley, garlic.... There are dozens of different flavor combos. But add the spices and herbs during the last minute or two of cooking so they don't burn.
    What I like about this method: You can have some really tasty fried potatoes on the table within 15 minutes by parboiling the potatoes in the microwave. (5 min microwave + 10 min in the skillet = perfect potatoes every time in my book). Since the potatoes are almost precooked before they hit the skillet, it speeds things up considerably. You're only frying them to develop that beautiful brown, crispy exterior, as well as giving them some extra flavor from the oil.
