    My family grew up on fried potatoes and cornbread, with beans and a fresh "slapped together" one layer cake with homemade frosting that my Mamma would cook almost daily from scratch. Takes me back a few years. 🙂💕🤗

    I find this dish tremendously country. I love country cooking. Country cooking puts me in direct contact with nature. There is nothing better than eating this southern fried potetos and onion in the middle of a countryside. Cheers, Domenico.

    I am so glad I found you. My mother passed away 20 years ago at 43 years old to a cat accident. She was born raised in Kentucky/ Ohio.. we grew up in wv. My mother was a great cook. Many of your recipes are very close or the same. I am sitting here wanting to fry potatoes for dinner like mom used to but can't call her and ask how.. but I have your video to help me along. hope I do OK tonight with "breakfast for dinner adding fried potato and onion. Thank you!

    Love your channel! My dad makes this and it's sooo good. In his version he adds Spam cut into tiny little squares, and green bell peppers. One of my favorite meals ever

    Thank you so much! I wanted this for dinner tonight but have rarely been able to cook the potatoes just right. I microwaved them a few minutes first so they're partially cooked, then followed your method, checking them every few minutes. The potatoes, onion, and smoked sausage turned out so very delicious!

    Was watching this today, and thought about my Mama, (who her nieces and nephews called Aunt Dot!😊), who passed away in 2007. She was a great cook, she just wasn't fond of cooking! 😄 She was so happy that I was not only good at cooking, thanks to her, but that I enjoyed cooking! One of the quick tricks she showed me for these, because Dad loved them, was to use day old baked or boiled potatoes. Because they'd been refrigerated overnight they were firm enough to cube up. She would saute chopped onions in olive oil with a bit of bacon grease and a pat of butter, then add the potatoes and saute til golden brown. Took like 20 minutes, used less oil, and Dad loved them!😊

    Yes please, with country gravy over them. I'll have biscuits instead of cornbread. Corn and Pinto Beans? You betcha. With a couple fried Pork Chops. And don't forget the Turnip Greens! That's the way my Hillbilly Mama fed me for Sunday dinner growing up, may God rest her soul. I'm 71 now and it didn't kill me so I'm gonna keep on doing it!

    I grew up on fried potatoes and onions. Sometimes my mother would slice carrots really thin and fry them along with potatoes and onions. Yummy.

    Put the potatoes in with a little less heat than is shown and cook the potatoes until they are brown and trying to stick together, like a big hashbrown. Then the first turn just breaks things up a little as you flip and finish browning. If you must flip again only break up a little more.
    This will give a contrast between crunchy outer layers and the silky inner layers.
    If you add onions wait until the potatoes are at least half done so they don't burn and they just become soft and creamy.
    Otherwise, this video did make me hungry

      When I loved in ID, most of the potatoes were from Canada! Go figure. With the exception of the Boise co-op (the large one on Eagle Rd). I still miss the co-op!

    I make home fries all the time but use my homemade ghee instead of oils. I typically cook potatoes in water in microwave for 4 min then drain to get them started. I may try what you did, in pan with lid first then fry them.

    I speed up the cooking of the potatoes by microwaving the diced potatoes for a couple minutes to start the cooking process.

    You need to learn how to make Alabama style potatoes. Roll them in corn meal and then fry in oil. Makes all the difference.

    Hello Hillybilly Kitchen hostess.. I just came across your channel and just subscribed!! I have been wanting to find a recipe my mom used to make growing up. She used to make a pot of fresh green beans with salt pork, potatoes and we used to have that for dinner with raw green onions and tomatoes (and sometimes cucumbers). Man, it was GOOD. I regret not learning how to make all this before she died. Can you please do a video on this (assuming you know this one; seems like ya would)?? Maybe you already have one? I skimmed through your video list but didn't see something like it. I did see your cornbread recipes which looks great. Thank you so much!!❤

      @@leslierose-akumbu4263 My Grandma put cottage ham diced in it. Green beans and an onion and diced potatoes. Salt and pepper. Pour water in it until it covers food. Bring to boil then turn heat down to simmer. Cook until potatoes and onions are soft. Stir from time to time.The water will cook down. Grandpa would put a lid on it Corn bread on the side with sprinkle of sugar or honey on top. Hope you try it. And its as good. I don,t eat pork. But whatever Grandparents made we ate. It was good. Wow that brought back memories😁 I am 66 and was a kid eating this many times at their house. Lol Other than that I can,t remember when I ate pork.
