    This is very close to my home fries, but I use leftover potatoes that soaked in all the beef & seasonings flavors from being cooked in a pot-roast. I say leftovers, but really I add more potatoes than I need with the pot-roast to make home fries.

    Very nice: refrigerating the potatoes after roasting them makes the starch resistant, a great benefit for diabetics since that greatly slows the digestion of the potatoes: no spike in blood glucose. (I roast purple potatoes, even more diabetic-friendly, and refrigerate those before eating.)

    We have made these, not torn or deep fried since I was a kid. My mom would put left over baked potatoes in the fridge, fry them up the next morning for breakfast, and serve with fried eggs and toast. We still do. Craveable. Othing is ever really new.

    These potatoes have got everything I've ever wanted in a home cooked french fry - really crispy on the outside, soft and "potato-y" on the inside, and so much easier to make! So what if they're shaped a little differently? While making these, I discovered that using a fork to break them apart works really well.

    My dad basically made these for breakfast when I was little, but tossed with a shitload of black pepper with the salt at the end, when they come out of the fryer. He just used a cast iron! Only difference is you just gotta flip them while they cook.

    These sound a lot like the Crispy Broken Truffle Spuds on the dinner menu at 618 in Freehold NJ. We had these for the first time on Saturday at the suggestion of our server and they were incredible. Need to try this recipe.

    New invention 🤪 When I went camping as a kid back in the 70’s we had baked potatoes for dinner made over the campfire. In the the morning we fried the left over potatoes for breakfast the same way. I learn to make this from my grandpa. Back in the 30’s he ate two things every day beans and potatoes. He said at dinner they would have a baked potatoes that they had wrapped in clay from the creek and baked in the fire (depression era aluminum foil). The next morning they would fry the left over potatoes for breakfast. this dish is nothing new, it has been a long time staple for many a family.

    So I made these tonight but I wanted to try them in the oven first to not deal with the oil. They were good and crispy but some of the smaller pieces burned a bit. That's why frying is probably better. You can control the doneness.

    Anything fried tastes good. My mother used to make this all the time. It was call left-over fried baked potatoes. The only difference is she used a knife.

    I put some of the powdered ranch seasoning mix on the homemade fries that i make for my grandkids, they love em! I'm guessing that would be good on your torn n frieds as well! Bon appetite

      You can't fry in an air fryer. It's just a tabletop convection oven. Fried foods are not unhealthy as long as you don't eat them every day.

      @@morrismonet3554 Yes a air fryer is just a convection oven, but you can lightly spray you potatoes with oil and cook them in a convection oven and they come out crispy and far less greasy.

      @@matthewhuszarik4173 if your fried potatoes are greasy you are doing it wrong. I know lots of people love their air fryers, but I believe it's more because of the convenience. Most food defiantly tasted better and crispier when fried.

      @@morrismonet3554 How crispy the potatoes get is more a factor on how long they are cooked than either method. Look at fast food restaurants their fries aren’t particularly crispy. Air frying with a light dusting of oil is the best method I have found to make potatoes both crispy and less greasy. When you submerge potatoes in oil they absorb more and the more irregular the surface increasing the surface area the more oil they absorb. I have never had anything deep fried that was less greasy that air fired or potatoes cooked in a convection oven with a light misting of oil.

    This is more about time than work. Put forth almost no effort with an ingredient we usually have on hand, fry it crisp, and eat it with mayonnaise. What's not to love? 🥰

      Yes, you sure can. I routinely make extra baked potatoes for exactly that reason. They keep for about a week in the fridge.

      Refrigeration allows the starches to gel and become sticky. Keeps them from falling apart and allows them to crisp up.

    As I was watching I thought these were a fried riff on smashed potatoes. While they look really good they require advance planning so not a quick side to the steak I'm grilling for dinner. Probably great for a Super Bowl party.

      Yeah. Americans are generally possesed by Ketchup since childhood but those who tried mayo on fries a couple of times quickly understand why the rest of the world puts mayo on them. Edit: The Spanish speaking and French speaking countries were already using mayo since forever but now even in UK mayo is largely outselling ketchup as their main condiment.

      I am an American and I do like the "traditional" ketchup and fries combination that I was raised on.
      However, mayo with fries is good too.....
      And, when I get really drunk, I will make all kinds of spicy variations of each...
      Variation/Life is good.

      Go back and listen to Brian talk while he does the aoli, it's basically mayo with lemon juice, garlic, cayenne I think and I forget what else, outside of some salt and you make it like you do mayo. I think he notes how much each ingredient used is. I do similar white a bit when deciding to make the dish. I in fact, did this over on Carla Lalli Music's channel last week when she did the lemon/brown butter pasta dish. Was able to replicate it, outside of not doing homemade pasta (no time) so store bought thin spaghetti was used instead. It was very good.

    The upside is refrigerating cuts the glycemic problem ,, however we just straight tear the potatoes with a paring knife into much smaller pieces and cook ‘‘em up. “Gramdma” potatoes date to at least my husbands abuella who is from Spain
