  • Fried Potatoes - With Fat Reducing Tip. Southern Fried Potatoes with Onions are a staple in every hillbilly kitchen. You can make perfect fried taters in any skillet even cast iron without sticking or burning. I also share a fat/calorie cutting tip so you can continue to enjoy fried foods even if you’re on one of them dad blamed diets. Fried taters are one of them foods that just make life better. At the end of a rough day, I have a plate of fried taters, thank God for getting me through it, the taters on my plate and the hope for the next day. Fried taters, pinto beans, corn and cornbread, are one of the best meals ever concocted.

One of the most memorable meals mother cooked when I was a girl was fried taters with onions, a pot of pinto beans, fried kebalsa sausage, and cornbread was always available with this meal...the occasion of this meal was served as a Sunday supper meal...I respect this medley for various reasons, but I enjoy this now out of tradition and memories growing up 😊

My grandparents were farmers in Michigan.
But my grandma made a number of the dishes you make.
I grew up on fried potatoes.
Sometimes with onion, sometimes with chunks of buttered bread, sometimes just the potatoes.
She would make them from raw at times, usually from leftover boiled potatoes. They fry up quick.
My grandma always had an extra potato or 2 in the pot, just in case someone stopped by.
My memory says that someone stopping by was pretty often...and just as often at dinner time.
So the meat and veggies got divided a little smaller. There was always room at the table and food for an unplanned guest.
Which means there was nearly always leftover potatoes.
In the event someone stopped by when we were having leftover potatoes, a filler like a few slices of bread, cut or torn into chunks, stretched it out a little further.

Several years ago the doctor told my dad he had to cut back on his salt intake. Momma was from the old school of you couldn't cook food without adding salt. I cooked them several meals where I added a little salt after the food was done cooking. Needless to say that Momma and Daddy were surprised that the food tasted better.

This looks delicious. I love cold pressed oils but the reason those are good for you is because they're not heated up and denatured in the pressing like most traditional vegetable oils are. That's why ya pay the big bucks for them as opposed to the regular stuff. When you use them for high heat frying that kinda negates the cold pressed nature, so I'd personally save that stuff for low temp cooking or as a finishing oil to drizzle on top of something already cooked. Same thing with extra virgin olive oil the regular stuff can be used for low heat frying and cooking but the extra virgin is to use for salads or finishing oil. I personally love coconut oil, avocado oil, or peanut oil for high heat frying and regular virgin olive oil for lower heat frying. Ghee and Tallow are delicious too of coure.

I've used a lot ove Evo and of course veg oil. But we're getting older and I know I need to use healthier oil.

    • @geno5360

@@micci7795 Coconut will taste of coconut heavily unless you get the refined version (Don't, refined oils are bad for you). If you want a neutral tasting oil Avocado Oil is by far your best bet. Not cheap, but really good for high heat cooking.

He likes his taters REALLY crispy like french fries, I like em crisp on outside but, like you, really soft on inside. I've always done thin slices, think nest time I'ma try the chunks (not sure why I've never done it that way) but I've a feeling I'll like em better!!😉. Absolutely have to use a cast iron skillet👍👍

My great grandmother and grandmother made fried potatoes with supper several times a week. Almost always with bacon grease. My grandpa would also take the leftover baked potatoes from the night before and slice them up for breakfast fried potatoes, skin and all.

Thank you so much for these tips. I’ve given up on fried potatoes because of the fat intake was too high for me. I love watching you cook with iron and miss my mom’s old pans. They got lost somehow in a move 20 years ago and they were about 30 years old then. After petting and pricing replacements (inferior replacements) I settled on 2 this summer. 😊 Lol. Watching you must have tipped me over the edge. P.s., my prayers for you and yours.

I love to make fried potatoes with eggs for breakfast sometimes. Hate Facebook. The "expert" cooks on the internet are often trying to sell one of their products, like special spatulas made of wood, to use with cast iron.

Do you scramble the eggs in with the potatoes or on the side ? I scramble them and pour over the potatoes after browning them and getting the grease out with paper towels . My husband’s mother made them that way and my husband asked me to make them that way after we got married and I said I’m not eating them that way and took mine out but I tried them and I loved it lol now it’s the way I make them even when I make them for supper.

When onions are on sale I buy a lot and cook them in a crockpot on low with a lot of butter and dome olive oil. When they caramelize, I strain out the oil, freeze it and use it to fry eggs and potatoes. We just eat the onions as a side with cheese melted on top.
