    My Daddy loved Justin Wilson. I'd come over and we would watch and laugh and talk about how good his cooking was. We'd talk about his funny accent, and then one day, my Daddy started wearing suspenders AND a belt, just like Justin Wilson.. "can't take any chances" Daddy would say and we would laugh...'cause that's what Justin said. I miss this show and I miss my Daddy.

    I was a little asthmatic kid in the mid 1980's that had to spend to many Saturdays inside and I can remember watching this very episode all of those years ago back when Public Television was worth tuning into. Very good memories. Its sad kids do not have things like this anymore. now it would be a food network cupcake war or a competition or just a bunch of adults that behave poorly and thanks to the internet we are inundated with every bad deed.

    i married a boy from Baton Rouge and we both loved to cook. Nothing better than to sit together and watch Justin make something really tasty. And then try to make it ourselves. I'm so glad I found these videos. I had forgotten what a great story teller Justin was, and these episodes let me learn and laugh and the same time.

    My daddy was from northern Louisiana and liked his accent to. We'd laugh at his jokes and just have a good time. Miss laughing with my daddy.

    So glad for you to see me I guarantee! RIP Justin. Thank you for the lessons and the stories. Modern cooking shows are needing more of this, not everything a competition, you taught actual cooking. Miss you Good ole Boy

    So happy to have found this channel. My son grew up watching Justin Wilson as a tiny little guy. Justin fascinated him. He did not watch much TV but he loved Justin. We recorded it for him but we don’t have vhs player anymore. 😂

      I watched it on PBS. I really miss his show & him so much. A little wine for the pot. A little bit of wine for the cook. Lol. When he said a teaspoon of salt it was a teaspoon exactly.

    The color of the appliances (avocado green) was very popular in the early 1970's. It looks hideous today but they were in many household kitchens along with the other color harvest gold.

    Saturday afternoon I watched Justin Wilson on the PBS channel 12. Religiously. I watched all the cooking shows in the 80's. Thank God these shows are on TH-cam. Yan Can Cook, and the Frugal Gourmet Jeff Smith.

    I love learning from cooking shows because I love cooking and I like the cook new stuff and learn different cultures and this is a good cooking show and I love it even though it's old I still love it he makes good points keep up the good work whoever put this on people can learn from this and learn from other cooking shows😅😜😇👋🔆📺

    I learned how to cook Cajun food in my kitchen thanks to Justin Wilson, and also taught me to cook with a sense of humor. Made the food taste better when you're in a good mood. And I firmly believe that is his secret ingredient for all his recipes.

    He is definitely my favorite. The food/cooking channels should run shows from Mr Wilson and Julia because they were great pioneers in cooking and I truly enjoy and appreciate what they have done in their time. The food channels are just full of it and so are majority of the mess they play on their channels. It’s awful now . I use to love getting home from my college courses/classes to watch majority if not all of the shows they were running on the food network but now I just can’t watch any of the shows they run today

    I always assumed that hush puppies originated from the leftover ingredients when you dredge the catfish. Flour, cornmeal, eggs, add a little baking powder and buttermilk, and there you go. But once I looked it up, and all the articles claimed that they didn’t know where they originated from. I’m glad to hear Justin knows where they come from!

      Started back in the 1800's... middle to late, .....any left over batter, the plantation cook would fry the left over batter up... after it was cooled down... it was tossed out to the barkin dogs at the back door.
      Somewhere along the way.... somebody must of tasted them & they became part of meals for poor folks. U could throw together what meal & seasonin ya had & fry it.

    Why haven't there been a movie about Justin's life. I grew up watching his cooking shows and used to walk around trying to talk like him. If I spoke like him I would be the most popular person in the northern U.S. As for this video I am going to surprise the kids tomorrow and make some garlic bread.

    I have about a hundred old Cajun Cookbooks that I study ,(as in Using) that I will never give up. There is a right way and a wrong way to cook. If you screw that up... Well, study to teach yourself! You can do it!😅

    Prefer these uploads over the ones on the Justin Wilson youtube channel. Correct aspect and better quality. Wonder if they still have the master tapes for these, or if they are at PBS or erased. I remember other episodes too, one with fried chicken, but haven't seen that one since it aired on PBS in the early 90s or so.

    The health craze hadn't yet become popular as attested by his over use of that garlic butter mixture onto the French bread. Less than a third of it would be sufficient for today's tastes.

      Why ruin something delicious and decadent? One simple rule . . . everything in moderation. Anyone, including a person with known heart issues, could eat a decent portion of that same garlic bread without the least bit of risk, as long as they refrain from having it again for a good long while. Food that is prepared at home, without 15-letter ingredients and a slew of preservatives, is the first key to healthier eating. Eating less healthy foods (including those made at home with natural ingredients) should be a treat, consumed so rarely that you enjoy them all the more when you do have them. When foods like pizza, fried chicken, packaged frozen foods or fatty spreads like butter and cream cheese become a staple of someone's diet, the results for the greater portion of the population are most likely going to be obesity, Type 2 Diabetes and early death. There are a hell of a lot more fat, unhealthy people now than when Justin aired this show, ah ga-ron-tee.
