Justin was not born Cajun though he was Catholic and grew up nearby in The Florida parishes which are not among the Cajun Parishes but are heavily influenced by both Cajun and Creole food Culture do to migration over time so he spent a lot of time around them. But Justin Wilson was also a segregationist whom many felt took advantage of and disrespected Cajun culture. His accent is a very strong deep south accent btw not Cajun, but is definitely a transitional French creole influenced Louisiana version of it. Cajun English today sounds quite Southern but is also very distinctive and is significantly French influenced but more like upper Midwest English is German and Norwegian influenced rather then as a Cajun French accent in English. It is not like the standard lower South accent however. In other words, Cajun English today is a uneque and indigenous type of regional Southerner accent and dialect. It is now widely spoken across most of southern and parts of central Louisiana even by many of those without French Ancestry.
Truthfully he was a segregationist, which I’m willing to overlook given the time and area he was raised in, and wasn’t even Cajun himself. He was welsh on his dad's side and his mom had a maiden name (Toadvin) which indicates ancestry from Guernsey but otherwise her genealogy couldn’t be traced properly. What is certain is that neither of his parents were French or Acadian. Justin adopted the Cajun personality and language as part of an act, which was very displeasing to some Cajun people who felt his act was a poor caricature and degrading to Cajun people. That said, he was a great cook and a good entertainer.
I was a kid and grew up watching him with my Aunt from New Orleans. We would just laugh. What great memories. I wish they were all back here now. How I miss them all.

He told a story, gave a quick french language lesson. Educated us on animals and gave us a recipe with jokes. He's like the Muhammad Alli of cooking shows.
Oh, how my Late Father loved this show. My Father was cajun and from Louisiana so you can't imagine how happy he was when Justin would come on the TV. He loved his cookin', but most of all his stories and his sense of humor.
Watching this, you quickly realize that for 50 years there were mostly full grown adults on television, in contrast to the past 20 years when it's largely only people under 35 years of age who are on TV. For MY money, Justin Wilson was and still is, the most entertaining TV chef I've had the pleasure to watch.
I can't stand all these younger people who think they know things. I can't stand the way they talk and yell and butcher the English language, not to mention that what they all think is "new" is actually stuff my grandmother taught me. I love old people. They have so much good knowledge.

I love Justin Wilson... I miss him. I enjoyed watching his cooking shows back in the day. Listening and watching his show allows me to escape from all the tension and chaos in 2021.
I remember my mom and dad loved watching "Yus-tan" Wilson every Saturday. I also remember he devoted more time to his Cajun yarns than the essence of his recipes. However, it was clean, funny, family entertainment that will always be missed. RIP JW!!
This was a great man. He was instrumental in influencing several generations of chefs and home cooks. And he did so with a style that was all his own. His good-natured personality, mixed with his little Cajun one-liners were absolutely perfect for hooking in viewers. His legacy continues to live on, and he will always be remembered as one of the best to ever do it. I guarantee!
I started watching Mr Wilson early on. I was the only person in the family that watched him. After a couple weeks one other family member would start. And every week or two another. Wasn’t to long before a crowd was gathering for every show. Most never cooked anything ever but just loved him. I’ve cooked many of his recipes and they were definitely awesome.....I gare..own...teee! Miss him and glad I can see him on TH-cam!
My grandparents took me to see one of his shows in Atlanta when i was a kid. He fed everyone. Some of the best cajun food I've ever had. And great stories too

The date on my recipe card is July 1980 !! It is deee-licious! And worth making! •In this video Justin forgot to tell us how much wine to use for the Potatoes dish... my recipe card says: 1 cup Sauterne. Add the wine after you've made all the layers. Then put the prepared dish into the preheated 375° F. oven to bake 1 hour. My notes: •Around 2010, I started using Chenin Blanc wine, instead of Sauterne, with outstanding taste results. •A few times I've used Parmesan cheese instead of the Romano. Very good flavor. I like the tang of the Romano, more.

I started coming for the family at age 13. I learned basic cooking from my mom, but I learned how to put flair in my dishes from Justin Wilson. Miss him!
My late husband and I loved him! We even watched him in the hospital room 33 years ago right after I had my son! We loved when he kept pouring in the wine while he kept talking!
Gawd I loved Justin. My oldest son Kevin used to set in front of the TV and watch his show every weekend, and I learned some of my finest recipes from that show.
I thank God that he let such a wonderful, kind hearted, entertaining man into our lives for such a short time. He is sorely missed, but he lives on in our memories, and his recipes. This brings back my childhood. We lived in the middle of nowhere so we only had a few channels. I loved Justin and of course, Bob Ross. Here I was a little girl and watching these two as if they were doing a children's program. We had some greats back in the day, didn't we?
It just gives me warm feelings in my heart listening to Justin speak and tell stories. He is so genuine and real it is ridiculous. At my grocer, they installed a TV above the meat counter and just play Justin Wilslm cooking videos now. Been watching Mr. Wilson since the 80's in LA on PBS. Learned so much as he demonstrated how to make really good authentic Cajun Food. Great food! He is an Icon in the great State of Louisiana! May he rest in peace.

I remember being a little girl 8 years watching Justin Wilson with my grandmother. I loved his show and his stories. Cooking was always a passion of mine. It’s good to know how at 36 a lot of my inspiration came from him and my creole background.

I spent 3 Thanksgivings with the wonderful Robichaux family of Thibodaux Louisiana and enjoyed watching Justin Wilson just because he always reminded me of those great people and their great friends. Thanks for posting these.
Chef Justin had my mother and I in stiches constantly. Even today I still say things in his vernacular and crack people up. Met a Cajun gentleman in Biloxi and the dealer was bent over in tears laughing at us talk.

My favorite chef evr in 53 ears of me cookin.!! My best years of cooking came after I visited Louisiana at age 16. I learned from a genuine french speaking Cajun lady. My friend's mother. She cooked to the finite detail as I do now.
There was also a guy named Floyd. He traveled around Europe spending time in each country. The ones I really remember were "Floyd on France". One recipe involved cooking live eels and it was particularly disgusting.

I remember him. He even advertised for Ruffles Potato Chips back in the 80s.. A Cajun style potato chip. They were just the right sweetness with heat. I can still taste them....
It's not actually a Cajun accent though, to be clear. Justin Wilson was not born Cajun but was Catholic and came from the nearby Florida parishes in an area greatly influenced by migration of Cajuns over time. However he spoke with a French Creole and Cajun influenced but mostly Deep South accent, very common to that part of Louisiana. The true Cajun English Accent is different, still Southern sounding but also very uneque and French influenced but now indigenous to the region so spoken by many not of Cajun ancestry as well.
I love Justin Wilson's cooking! My Daddy God Rest his soul in heaven, I watched him cook on the weekend's, we loved his show. So nice to see him now at my tender age of 66. Time sure flys. I miss my Daddy. Wish he was watching with me now. God rest Justin Wilson's soul in heaven.
Folks that know me know that my Momma is a wonderful cook and they assume that's where I get my skills. In actuality I used to watch Justin Wilson (grudgingly at first) with my father (Lord rest his soul). He unknowingly instilled a love of cooking shows and subsequently cooking that I wish I had a chance to thank both of them for. Thanks for posting....brings back great memories.

Been watching Mr. Wilson since the 80's in LA on PBS. Learned so much as he demonstrated how to make really good authentic Cajun Food. Great food! He is an Icon in the great State of Louisiana! May he rest in peace.
I was in the Army and stationed in Louisians for 18 months and Justin brings back good memories. He was fabulous .
This is my first experience of this wonderful man & it will definitely not be the last, i gaarontee! I could listen to him all day long.

Pretty much what Martha Stewart does now.... if you watch her show, there is always a glass of wine at the edge of the shot and the level goes up and down through the show.... HAMMERED by the end. Lol. I miss Justin on tv... Julia too.

I watched Justin every week till his show ended. What I wouldn't have given to have had him as a grandfather. Amazing food and stories all the time.

I remember being a little girl 8 years watching Justin Wilson with my grandmother. I loved his show and his stories. Cooking was always a passion of mine. It’s good to know how at 36 a lot of my inspiration came from him and my creole background.

I spent 3 Thanksgivings with the wonderful Robichaux family of Thibodaux Louisiana and enjoyed watching Justin Wilson just because he always reminded me of those great people and their great friends.

Chef Justin had my mother and I in stiches constantly. Even today I still say things in his vernacular and crack people up. Met a Cajun gentleman in Biloxi and the dealer was bent over in tears laughing at us talk.
This dude is great. Watched him all the time as a kid. In hindsight I realize how much he influenced me to become a chef...

My mom used to watch this show all the time when I was a kid when I got older the funny thing is I started to watch it I really enjoyed his honesty and his great stories and also to learn how to cook some Great meals this one is definitely missed of those that have passed over

My favorite chef evr in 53 ears of me cookin.!! My best years of cooking came after I visited Louisiana at age 16. I learned from a genuine french speaking Cajun lady. My friend's mother. She cooked to the finite detail as I do now.

Grew up on Justin Wilson, Julia Child, Jeff Smith from Frugal Gourmet and Yan can cook! The original Food Network.
There was also a guy named Floyd. He traveled around Europe spending time in each country. The ones I really remember were "Floyd on France". One recipe involved cooking live eels and it was particularly disgusting.

my mother and grandmother taught me a lot but watching mr. wilson, pasquale and the frugal gourmet really opened up the world of food for me back when i was younger. thanks for the lessons, i'm glad to see your legacy live on.

I remember him. He even advertised for Ruffles Potato Chips back in the 80s.. A Cajun style potato chip. They were just the right sweetness with heat. I can still taste them....
This guy cooked the stuff we all wanted to see cooked plus the comedy and Cajun accent was just gold.
It's not actually a Cajun accent though, to be clear. Justin Wilson was not born Cajun but was Catholic and came from the nearby Florida parishes in an area greatly influenced by migration of Cajuns over time. However he spoke with a French Creole and Cajun influenced but mostly Deep South accent, very common to that part of Louisiana. The true Cajun English Accent is different, still Southern sounding but also very uneque and French influenced but now indigenous to the region so spoken by many not of Cajun ancestry as well.
I still use some of his methods 30 years later. Brings back some good memories.

I love Justin Wilson's cooking! My Daddy God Rest his soul in heaven, I watched him cook on the weekend's, we loved his show. So nice to see him now at my tender age of 66. Time sure flys. I miss my Daddy. Wish he was watching with me now. God rest Justin Wilson's soul in heaven.

Folks that know me know that my Momma is a wonderful cook and they assume that's where I get my skills. In actuality I used to watch Justin Wilson (grudgingly at first) with my father (Lord rest his soul). He unknowingly instilled a love of cooking shows and subsequently cooking that I wish I had a chance to thank both of them for. Thanks for posting....brings back great memories.
