I wondered about this and was going to try my next donut recipe with cake flour. Bread flour has quite a lot of gluten development vs cake flour - is that right? I'm thinking cake flour will develop a more tender donut - just not sure how the recipe changes when swapping out all purpose flour with cake flour but I'm feeling more confident in trying because of your comment :) Thank you!

Thank you for the recipe! Some things I did for this recipe; 1. Let your yeast sit out of the fridge for a half hour. Yeast doesn’t like to wake up quick. 2. Scald your milk first. It helps breakdown it’s structure for the yeast to thrive. 3. Add the sugar while the milk is hot. It dissolves better. 4. Let milk and sugar cool to 110°-115°f. Then add yeast. 5. Use Crisco, Peanut oil if you can. Vegetable if you can’t. Other oils don’t taste right for frying. Never use canola for frying something sweet. I prefer peanut. 6. Low temperature is usually 160°f. That does not give it a good crisp. I did mine at 320°f. 7. I add 1tsp vanilla to the whipped cream. 0:02 I hope this helps people who have not had success!
It might be smart to allow the bread to fry at a low temp until the insides are cooked, take them out of the fryer, bump up the temp, then refry for 10 seconds or so. Cooked inside and crispy outside!
used canola cause it was all i had.. it was so fatty and greasy tasting. i felt like i just ate a bunch of mcdonalds! not good, certainly not healthy. i don’t know what other oils would taste like but in my experience it tasted best baked, with the powdered sugar on top. it was sweet but didn’t make me feel stuffed or guilty! generally deep frying just does not sound like a good idea, way greasier than any deep fried chicken i’ve had.
Made this today! The only differences is i used cream cheese for my cream and t i used cherries from the can!! Turned out soo delicious. My family loved it! Thanks so much
@@45someone Moist? Did you measure correctly. it may be cause you added too much milk or maybe too much butter even. But those might not be the case either, their dough was moist at the beginning and they kept kneading it. So try doing that. Adding flour wont help because it'll make your dough hard and tough
This was the softest donut dough I've ever made. Also I let the whole dough rest for 30 mins after kneading it. It is resting for its final 30mins so Ill update you on how the final product was. Personally for me it tasted more bread like so you can add more sugar to make the Dough sweeter
More sugar? I think more butter...thank you for sharing about it tasts "bread" because, to my opinion, there is not enough butter...butter and not sugar is the most important to make the dough sweeter. Greetings from France.

Same in Finland! It's called laskiaispäivä or laskiainen and we also eat semla (laskiaispulla). We fill them with whipped cream, almond paste or strawberry/raspberry jam.

Make 2 fermentations but don't form the little balls in the 2 fermentation like the vidéo shows !!! It's useless to do so !!! Work the dough , form into à Ball and let it rise twice big , about 2 hours. Defleath the dough and reformed into a ball again and let it rise twice again , about 1 hour to 1 1/2 hours . Now , separate into 8 pieces and forme a ball and press on to flattered like an donuts and let it rise again to rise double , 1 hours or so . Fry the donuts. Fry till golden brown, don't cook to long into oil , to finish and to be sure the inside is cook put on a pan with a grill on and put all the cook donuts and put in oven at 250 F . It doesn't need to be so complicated and with all that manipulation.... NOTE : YOU don't need to put the butter in the dough like the video, let the butter melt in with the hot milk. Doesn't need to be unsalted butter also.... And for instant yeast , we don't have to diluted in liquids , it is made to put directly in the flour . As a bread maker for 40 years , the only yeast who need to be diluted in the liquids is the fresh yeast and the one in the little package , the dry actif yeast ....and of course the fresh levain ...

Cake flour works best for cake donuts(no yeast)--actually all purpose flour does a pretty decent job with donut making--the gluten content(the binding protein that activates to trap the air which creates that fluffiness we all love) in ap=8-11% vs bread 12-14%, cake flour only has like 7-9%----which is why it works so well for cake--it creates a lighter, fluffier crumb--What we all need with our base dough is a bit of patience, fresh ingredients, and a bit of knowledge about how ingredients respond to each other. My flour came out too moist and I keep adding more flour but it wouldn’t dry like the one on the video. How did you do it 😭

If you put some vanilla pudding mix in the whipped cream it will act as a stabilizer and will help the cream to last longer.

I recommend to heat the oil before putting in the bread so the bread won't be oily.

I looked it up and it seems bananas, buttermilk, silken tofu, soy yogurt, and sweetened condensed milk are good substitutes (all 1/4 cup = 1 egg)

Make 2 fermentations but don't form the little balls in the 2 fermentation like the vidéo shows !!! It's useless to do so !!! Work the dough , form into à Ball and let it rise twice big , about 2 hours. Defleath the dough and reformed into a ball again and let it rise twice again , about 1 hour to 1 1/2 hours . Now , separate into 8 pieces and forme a ball and press on to flattered like an donuts and let it rise again to rise double , 1 hours or so . Fry the donuts. Fry till golden brown, don't cook to long into oil , to finish and to be sure the inside is cook put on a pan with a grill on and put all the cook donuts and put in oven at 250 F . It doesn't need to be so complicated and with all that manipulation.... NOTE : YOU don't need to put the butter in the dough like the video, let the butter melt in with the hot milk. Doesn't need to be unsalted butter also.... And for instant yeast , we don't have to diluted in liquids , it is made to put directly in the flour . As a bread maker for 40 years , the only yeast who need to be diluted in the liquids is the fresh yeast and the one in the little package , the dry actif yeast ....and of course the fresh levain ...

Cake flour works best for cake donuts(no yeast)--actually all purpose flour does a pretty decent job with donut making--the gluten content(the binding protein that activates to trap the air which creates that fluffiness we all love) in ap=8-11% vs bread 12-14%, cake flour only has like 7-9%----which is why it works so well for cake--it creates a lighter, fluffier crumb--What we all need with our base dough is a bit of patience, fresh ingredients, and a bit of knowledge about how ingredients respond to each other.
