A tip: After prepping peppers turn them upside down in a baking dish of 1/2 inch water and bake at 400 degree's for 20 minutes then fill and bake until done. Perfect every time.👌
Excellent tip. I’ve cooked pepper for 30-40 minutes and still had them hard. I have an issue with his 20 minute directions. 20 mins Pre stuffed and 20 mins. Stuffed, sounds about right!
I’ve made something Greek-like (Hellenistic?) in stuffed pepper land in the past. They had lamb, rice, lemon juice, mint, parsley and feta or goat cheese (probably some other stuff) and were topped with Italian bread crumbs. Yum yum they were. My mother hated them. Some people!

I made those stuffed peppers, and my mind was blown. As you said, John, you gave us the perfect basic recipe for adding anything to it. I added eggplant to caramelize with the onions, various spices for heat, and sweet baby corn. Those peppers were so good! I did end up cooking them longer to make them more like the mushy ones my mom used to make... but they were a big hit that night! I had some leftover filling I wanted to bulk up into something for next meal - sloppy Joe's? Burritos or tacos? I went by instinct and when it was done, I had accidentally made some really tasty chili. It was so good, nobody cared to even wait for the cornbread. Next time I make this recipe, along with the eggplant and using ground lamb, I'll add kidney beans, bits of fig, pomegranate seeds, and middle Eastern spices, topped with chèvre. Thank you, John, for giving me the tools that helped to restore faith in myself in the kitchen. During a long period of depression, when I'd stopped cooking all together, your videos cheered me up and fueled my imagination with possibilities. When I finally was ready to take on the kitchen again, it was discouraging because I burned a lot of things, made poor choices in flavor combinations... you name it, it went wrong. But I didn't give up, and it was your channel that brought me around. Cooking and baking have brought me some of my greatest joys in life, and I am so grateful to have that back now.
My mom passed last April and she never wrote anything down when it came to recipes. This is why I'm going to start doing that so my kids will know how to make my dinners. Mix pepper mix, fill, peppers, top with tomato juice, in pan mirco but place lid sideways so don't explode, miro 25min, perfect each time. Lid not fully on sideways always very hot. Peppers cook perfectly

100% agree with the parsley comment. One of my favorite dishes we made in the Banquet Kitchen at the Paris Resort in Las Vegas was a Parsley Salad with Cracked Wheat, Diced Tomato, and a simple Olive Oil and Lemon Vinaigrette. About 85% chopped, fresh parsley, and 100% light and refreshing.
My husband never liked stuffed peppers until I made them in my instant pot. You’re recipe sounds perfect. Pressure cook them for a few minutes, and then top with cheese, pop under the broiler. The peppers are tender, but not mushy. Yum.

Thank you for the recipe. I changed it a little bit at the end. For those who can’t eat tomato sauce, I exchanged it for cream of celery soup and some cut up roasted tomatoes, with a 1/4 cup of water. It’s creamy and delicious.
Stuffed bell peppers and tomatoes are a great way to use up items that have become stale. You can use stale bread, cheese that has dried out a bit, and the ends of a roast that you're a bit tired of and has dried out and turn that into a filling for peppers and tomatoes and it's fantastic. I also had a friend make me quinoa stuffed bell peppers one time and it was one of the best things I ever ate and I am not a vegetarian.
John, made the recipe tonight following your recipe exactly. Not only was I able to stuff 6 large peppers, I had enough filling to fill ANOTHER 6! It went into the freezer for another quick meal! Quite delicious!

Thanks for bring back some wonderful memories of my grandmother making stuffed peppers. She never got around to writing down the recipe for me. In watching this, I remember that she precooked the peppers before stuffing them for about 15 minutes. Then she would cook them again, with the stuffing in the peppers.
I have never made stuffed peppers from precooked filling. And I have never added meltable cheese in the filling (only grated parm). But these looked amazing! I could smell all the aromas just watching you. And my mother always used green bell peppers but I prefer the red and orange. I also make a tomato sauce to pour over which really helps soften those yummy peppers. I definitely am going to make some your way and see if my family likes them more! Ok, just finished making these for dinner tonight. Had my husband taste the filling and he kept coming back, had to shoo him out of kitchen before I had no filling left. 😂 Decided to just fill 3 peppers and the other half of mixture we are going to have on top of cooked spaghetti squash. Did not realize they needed to be par cooked before they were stuffed. That really should be mentioned in the video. I followed the directions to the letter and ended up with rather raw peppers with delicious filling to serve for Christmas.

People make it both ways as well with the beef. I use cooked rice and raw ground beef and I add an egg and whatever seasonings and cheese toppers you want, then bake.

This is very popular in the Greek cuisine. My mom stuffed large potatoes, or eggplants as well. In the stuffing with the meat she would add grated potato or grated zucchini. We eat it with Greek feta 😋😋😋

I am so going to try this recipe. Looks so easy and sooo yummy. I haven't made stuffed peppers in years. I used to make them with a Mexican twist. Used fajita (can use taco) seasoning, Rotel tomatoes, & cheddar cheese along with onions, garlic, tomato paste, rice and ground beef.

I don’t usually give a thumbs up to a recipe until after I try it but this seems so no fail I have to 👍 now. Plus, I’ve tried a few of John’s recipe and they all ended up thumbs up anyway.
Looks great.. I've done it all raw when lazy as well as sauteed then baked...I think the difference is the caramelization gives extra flavour and a looser filling and all raw is a bit more compacted .. If im pre cooking filling i brush the eppers with olive oil and salt and pre bake them .. Then stuff with hot filling and broil just before I need them to save time... Chopped up chorizo or other spicy sausage added to the ground meat after caramalizing gives it a nice flavour too..
Made your recipe for dinner tonight; however used leftover chicken fried rice from a restaurant vs white rice. Have to say it was great! AND as a bonus liked the simplicity.

My mom uses both rice and bulgur for the filling. So good! Bulgur is such an underrated grain in my opinion.

This is very popular in the Greek cuisine. My mom stuffed large potatoes, or eggplants as well. In the stuffing with the meat she would add grated potato or grated zucchini. We eat it with Greek feta 😋😋😋
Normally don't like stuffed peppers for the typical reasons, but this video inspired me to give them a shot. Made them as written and there were great! Can't wait to try it again with Mexican flavors

I am so going to try this recipe. Looks so easy and sooo yummy. I haven't made stuffed peppers in years. I used to make them with a Mexican twist. Used fajita (can use taco) seasoning, Rotel tomatoes, & cheddar cheese along with onions, garlic, tomato paste, rice and ground beef.

Looks great.. I've done it all raw when lazy as well as sauteed then baked...I think the difference is the caramelization gives extra flavour and a looser filling and all raw is a bit more compacted .. If im pre cooking filling i brush the eppers with olive oil and salt and pre bake them .. Then stuff with hot filling and broil just before I need them to save time... Chopped up chorizo or other spicy sausage added to the ground meat after caramalizing gives it a nice flavour too..
So triple the garlic! Thanks for the recipe I can't wait to try it!

Definitely want to try these. Every recipe I’ve ever seen for stuffed peppers said to boil the peppers first.
Made your recipe for dinner tonight; however used leftover chicken fried rice from a restaurant vs white rice. Have to say it was great! AND as a bonus liked the simplicity.
I’ve never had stuffed peppers with mozz cheese on them I’ve been eating them since I was a kid . I’m gonna try this .
