Apple Dapple Cake, aka Fresh Apple Cake with Caramel Glaze

  • Did you know that oil cakes are trendy? They are moist and remain fresh longer than butter based cake. This may just be your new favorite!
    In the Southern USA, this cake is called Apple Dapple, in other areas it's known as a Caramel Apple Cake, or Fresh Apple Spice cake.

    Apple Dapple Cake or Fresh Apple Cake with Caramel Glaze
    serves 10-12
    Preheat oven to 350℉ and prep a 10 cup bundt cake pan, or a 9 x 13 inch cake pan.
    CAKE:
    3 cups diced Granny Smith apples (about 1-1/2 pounds, peeled, cored and diced)
    1 cup walnuts or pecans, chopped
    1 cup sweetened coconut
    Place apples into a medium sized bowl with 2 tablespoons of the sugar. Place nuts and coconut on top of the apples and set aside.
    Using the paddle attachment, place next four ingredients into the bowl and mix on a medium speed for 2 minutes.
    3 large eggs
    1 ¼ cup vegetable oil
    2 teaspoons vanilla
    2 cups granulated sugar
    In a separate bowl, mix together:
    3 cups all purpose flour
    1 teaspoon baking soda
    1 teaspoon salt
    1 teaspoon cinnamon
    1/4 teaspoon ground nutmeg
    On a slow speed, add the flour mixture to the egg mixture, just until they are incorporated.
    Mix the apple mixture together and add that to the cake batter. Stir to incorporate the ingredients. Pour the batter into your pan. This is a thick batter!
    Bundt pan: bake at 350℉ for about 1 hour 15 minutes to 1 hour 25 minutes
    9 x 13 inch pan: bake at 350℉ for 45 to 65 minutes
    The cake is ready when a skewer inserted into the center comes out with a few crumbs clinging to it.
    When the cake comes out of the oven, begin making the topping:
    Caramel Sauce:
    7 tablespoons of unsalted butter
    1 cup brown sugar, packed
    1/4 cup whole milk
    a pinch of salt
    1 teaspoon vanilla
    Combine all ingredients except vanilla, into a small saucepan over medium heat and bring to a boil. Reduce to a simmer to avoid boil over, let this cook for 15 minutes. If using a candy thermometer, you want the temp to come to 235℉. Remove the pan from the heat, add vanilla.
    Turn the cake onto a cooling rack placed over a sheet pan. Spoon and pour the caramel sauce over the cake. You won't use all of the sauce mixture on the first pour. Scrape the sauce drippings back into the pan. Let this sit for a few minutes and continue spooning caramel sauce. Continue pouring and painting the cake until the sauce is used up. Cool completely and enjoy!

      You're welcome, I hope this is the exact cake that you remember. It was so nice to have this in the house, it's a delicious cake. Notice that I wrote in the past tense... something this good doesn't last very long!

      @@ninainthekitchen1455 yes ma'am very similar. Only difference, my grandma would put the sugar and apples in a bowl and let them get a little brown over about an hour. She used slightly smaller size chop and about half the apples. Otherwise the crumb looks exactly the same and the smell of that cake was heavenly. And the praline seals in moisture making it an unusual and tasty cake.
      I am going to make this cake this weekend. I can't wait!
