I never had grandparents because they were gone before I was born. But my older siblings did have grandparents, and they spoke of this cake. Now I can make this cake in my grandparents' honor and imagine what it would have been like to know them. With coffee in the mornings and sweet iced tea in the hot afternoons. I remember my granny fixing this. She used black walnuts. And she would mix her stuff so quick that the aplles probably didn't get a chance to turn brown. She didn't measure stuff most of the time, probably didn't own a set of measuring cups did she moved to the city after my grandpa died. Love it

Made this cake last night using my mom’s tube pan. I made a glaze of sugar, orange juice, ginger, with a small pinch of salt. Boiled it down and poured small amount while cake hot. Then when cool, used the remaining glaze. Everyone loved it. Thanks for keeping these old recipes around. Blessings

Old catering trick: Use some Sprite or 7Up type of soda pop to keep fruits from browning, then drain off the fruit before adding to the batter. The citric acid in the pop works much better than plain water, and won't change the flavor of the cake like lemon or orange juice can. You can even drink it. Fresh apple cake is my fave cake. I usually do a cream cheese frosting using half the amount of powdered sugar than normal, which makes it a little tangier and slightly translucent, and sprinkle some reserved ground walnuts on top. The flavor of walnuts works better with apple cake than pecans or other nuts. I love apple bread, baked in loaf pans, also known as German Apple Bread. The batter is thicker than the cake batter and leave out the nuts. Yum. The cake uses white sugar, the bread uses brown sugar. I dice the apples a little smaller for the cake than I do for the loaf bread. Now I'm hungry for both!
My aunt makes me a apple cake once in a while and she just crumbles brown sugar over the top of it and when I cut it I just spread butter on each piece. So yummy. Hope you had fun at the family reunion. Prayers and blessings

I dieted all my life because of my career in show biz, now I’m 79 and letting myself enjoy things I didn’t in the past.
