DISCOVERING AMAZONIAN FOOD + sauce made from DEADLY ROOT!

  • Today I’m discovering Amazonian Food at amaZ restaurant with acclaimed chef Francesca Ferreyros. We’ll be eating many dishes using unique ingredients from the Amazon region in Peru like Paiche, one of the largest freshwater fish in the world. I will also try an ancestral sauce made from a deadly root! It’s called Tucupi Negro and it’s made from the fermented extract of Yuca Brava, a poisonous root. You won’t believe what this sauce tastes like! I was amaZed by the flavour profile.

    Andy, you are doing the English speaking world a huge favor by giving us really interesting insights into one of the most unique cuisines in the world. I like that you go into details not only in the 'HOW' of the Peruvian recipes (a separate thank you for that) but also into the cultural moments like this.

    I have immediately added the Amazon to my bucket list of places to visit! This video makes me want to go right now if I could I would book the next flight to Peru! You've got such a gift in translating how passionate most peruvians are about their food. I drool everytime I watch one of your videos.

    I realise how lucky l am to have tried all those dishes when very young. Unforgettable cuisine. No doubt we should consider ourselves God’s favourites because of the richness, freshness & unique produce of our Country. I wanted to steal the plates you were trying. As a new Aussie I think that everybody here should try those wonderful flavours that make you forget trials & tribulations. As soon as restrictions are over, I’ll be there. Thanks Andy!

      You're absolutely right! We're so lucky to call Peru home and you couldn't have said it in a better way : "God's favourites" We have so many different ecosystems making our land so rich! Yes, once we can fly over there I'll see you there for sure!

    This is super insightful Andy. So interesting to watch. I am so intrigued by the Amazon now..have just showed it to my fiance and now we both want to explore the Amazon. We've added it as a stop in our Peru trip, which will hopefully still happen at the end of the year. Fingers crossed. Anxiously waiting for your next video to come out.
