One thing you mentioned about how Poseidon takes the place of the giants in Epic. It's not depicted in any of the fan animatics to my knowledge, but Jorge has said and shown in the album livestreams that the backing vocals for Poseidon as well as what destroys Odysseus' ships alongside Poseidon's tidal waves in Ruthlessness are the Laestrygonians aka the giants. So, the giants are still in the story

There was 600 men Polyphemus killed 7 which makes 593 men left Poseidon drown most of the men that were not on Odysseus ship meaning he drowned 550 men leaving 43 men left
I believe if Eurylacus hadn’t spoken against Odysseus he would have trusted Eurylacus to help him take shifts in making sure the bag doesn’t open Or pretend to sleep then kill the person who tries to steal it to make them an example but that’s not who Odysseus is

In Odysseus's defense I don't think an apology would do shit. This entire song was about how "Ruthlessness is mercy upon ourselves." so Poseidon would have just killed them anyway. He probably saw this and said the best thing he could basically, "Hey look, your boy gave me shit and I checked him, I don't like it but we wanted to leave." Also, I just found this channel howdy doody my guy!
In complete fairness to Odysseus as well the gods aren't exactly known for meting out punishments FAIRLY for even a minor slight against them. So yeah as someone else said AT BEST an apology means Odysseus probably would've gotten away with his CREW being spared... not himself. But them Greek Gods do like their poetic ironies.
So to address the intro about Aeolus, he is a king of the winds and he’s a god read the Aeneid by Virgil he plays a massive part in the first bits of book 1. As Virgil is heavily inspired by both the Iliad and the Odyssey we can assume Aeolus is the same one who met Odysseus’s. The other four wind gods are seen to be more directionally focused eg. Boreas being the North wind etc. while Aeolus just rules over them all.
In one version (which I believe is the oldest we have on record? Could be wrong) the Greeks call it a tribute to Athena - which given her domain of wisdom and strategy is TECHNICALLY not a lie, while absolutely being a lie because that's not what they made it to be. Admittedly that'd probably piss Poseidon off even more though. Especially as, like Seiker mentioned, Ithica was a port city, and yet they mainly worshipped Athena.
Since no one really mentioned it, the reason Poseidon didnt like the Trojan comes from the fact he and Apollo were made to serve King Laomedon (Priam father, Hectors grandfather) for a years time for a fixed amount of wages by Zeus, then after building the walls and doing their service(punishment). Laomedon then didnt pay them the agreed upon wages Poseidon seems to have a few myths where people promise him something and then dont they deliver, the wooden horse being a fake sacrifice, Laomedons wages, the bull sacrifice from Minos

Like, there isn't any reason that the gods would be truly opposed to being worshipped together. They might have beef with each other in specific myths but it doesn't affect the rest, you know. But considering that most people are monotheists and heavily influenced by Christianism, the in-between lines of polytheism sort of gets lost Just look at any fictional world that has multiple gods, the worshippers of god A usually are fighting the worshippers of god B or C and so on. It's like the idea that you *have* to choose just one god is way too ingrained in people's minds.
