  • How To Make Rajma Masala - Rajma Recipe - Healthy & Nutritious Vegan Kidney Bean Curry
    Rajma masala is a North Indian dish made with kidney beans. This rajma recipe is a healthy and hearty meal and a perfect comfort food served with rice or roti.

    Ingredients for making rajma masala(red kidney beans curry)- serves 6
    * 1cup or 7 oz red kidney beans. Soak the beans overnight or for 8 hours in a lot of water along with 2 to 3 teaspoons of salt. Next day, drain all the water and rinse the beans again with fresh water. Please do not use the water in which the beans were soaked. Pressure cook the beans with 3 cups of hot water, 1/2 teaspoon salt and a teaspoon of oil.
    * 3 cups hot water (for pressure cooking)
    * 250 gm/8.5 oz / 1 large onion
    * 300 gm/ 11 oz/ 2 large ripe tomatoes. You can even use a cup of canned crushed tomatoes
    * 25 gm/ 1 oz / 9 large garlic cloves
    * 20 gm / 2 inch length ginger
    * 1 jalapeno or 1 green chilli chopped
    * 1 teaspoon turmeric powder
    * 2 teaspoons kashmiri red chilli powder/ 1/2 teaspoon cayenne pepper or red chilli powder/ 2 teaspoons paprika. Please adjust the proportion of red chilli powder according to your preference. Add less than the stated proportion to start with. You can always add more at the end of cooking after doing a taste test.
    * 2 heaped teaspoons ground coriander
    * 4 tablespoons water for making spice paste
    * 1 dry bay leaf
    * 1 teaspoon cumin seeds (jeera)
    * 1 teaspoon garam masala powder. If you want to make your own garam masala powder here is the recipe for it - • 3 MUST HAVE HOMEMADE I...
    * 1 teaspoon sugar (optional)
    * Salt to taste
    * 3 to 4 tablespoons oil
    * coriander leaves (cilantro)
    Serve this with rice or roti or toasted bread.

    Hey Bumbi, what a perfect recipe to kick start the new year! This is exactly how I too make my Rajma masala, the only difference is that I also add some diced paneer to it as all love paneer at home. And believe me , it takes the rajma to another level.

    Many years ago I visited an Indian restaurant while on a day trip outside of Toronto. I fell in love with Rajma on that day. But I couldn't remember the name of the dish and there was no internet to consult. When I returned several years later, the restaurant was gone. No one knew what I was talking about when I described it as "like Texas Chilli, but Indian style." 🤣 Then after several more years, by complete chance, I was visiting a favourite Indian vegan restaurant in Toronto and happened to notice one of the cooks eating it for his lunch break. It wasn't even on their menu! They said they only make it occasionally. So I asked if I could try it and sure enough, that was it! I begged them to put it on their menu, but they said to just call them and they could tell me if they made it that day. Of course, since then I've found recipes such as your version here for which I am so thankful. I think Rajma is still my favourite Indian dish.

    Delicious! My store bought garam masala powder made it taste very strongly cinnamon, but more ground black pepper balanced everything out. Thank you for posting wonderful vegan recipes 🙏💚🌱

    I have a very healthy curry leaf plant growing in a pot in my Central Texas back yard. When I see you add coriander leaves early, I usually think that means I can add some curry leaves early on, right before adding liquid (tomato purree for example) to warm up the leaves. Are there times when that would be bad? I love curry leaves, they are so delicious, and I'm always happy when I remember to use them. Thank you for all your recipes, they are so well produced and so far they have been delicious.

      Try to add curry leaves to the hot oil in the beginning before adding any other ingredient. It will splutter a little but will make the whole oil aromatic. You can also add before adding any liquid ingredient as you said.

      You can also cook in a pot. It will take more time though. Add more water if you need to while cooking the beans

      Awww!! Thanks for all your love. It will take more than an hour for the beans to get tender and you need to check on it from time to time to see if the water is drying up. Add more hot water if you see your beans are still not soft but the water has decreased.

    Could you use canned kidney beans rinsed off? Or black beans for more flavour? Although I've heard that black beans - although more flavoursome - don't cook down to as soft a consistency as red kidney bean. I would like your opinion on this Bumbi, and be guided by your advice.

      Sure you can use canned beans. You may or may not rinse the beans as the liquid will give a natural thickness to the gravy, though I do not like the look of that liquid in the cans and often rinse them. You can even use black beans.

      @@CurriesWithBumbi no I wouldn't use the liquid either, but I will use the kidney as they cook up softer, and I can mash some down and keep some whole for texture as you have done. Thank you for the recipe and your advice.

    I am watching as a newish subscriber and see you have an Instant Pot! Yay! We are sisters! I have a question about Kashmiri chili powder which I cannot find, so have been using regular chilli powder combined with paprika. Anyway, today I found WHOLE dried Kashmiri chilli peppers. They even have the stalks still on. Can I just grind them up (without the stalks of course!). And should I include or remove the seeds? The resulting powder ... will that be exactly what you use here, or will it be significantly hotter, or significantly tamer in flavour. As you say, you can’t take it out if you add too much of anything! Thank you, “Theresa in Toronto”.

      Welcome 🙏🏾, I am glad you are here. Always break off the stalks and discard them. I would advise to take out the seeds. Please wear gloves to do that. But I am telling you a combination of regular chilli powder and paprika also works well.

      @@CurriesWithBumbi Bumbi! I processed the 100g bag of whole Kashmiri chillies in my coffee grinder. Today I used just one teaspoon of it in your “dal makhani using black beans” recipe, with accidentally a lot more beans. Not quite double - but pretty close! . And one tomato plus lots of tomato paste for the “red” content, which I did blend pen with water to reconstitute and lots of garlic and ginger. Anyway it is AWESOME! Seriously my search has ended (after 6 attempts) for my final “go-to” recipe. I am convinced they key is the Kashmiri chilies, and have finalized the issue by officially hand writing it out and putting in my recipe folder. As part of my final estate which the kids can fight over ;)

      Hi, hope you discarded the salty water in which the beans were soaked and rinsed it again with some fresh water. You can add sugar/maple syrup/honey/sour cream/cooking cream to bring down the saltiness.

    It's not a dish originated in India. It's called lubia in Afghanistan and the middle East.

      Sorry, but Rajma masala is very popular all over India and I don’t think this video was about where the dish originated from . Rajma( red kidney beans) is originally from Mexico and Peru and it was brought to India by the Portuguese.
