I had this Jammu style Rajma Chawal with a cup full of ghee, while travelling from Katra to Pahalgam, in a roadside dhaba back in 2005. 18 years later I can still remember that taste. My mother tried to create that recipe multiple times later, but never got that original taste. I would try this recipe to see whether its the one that I am looking for.

You’ll be surprised with how little veg options those cuisines have. You can substitute the main protein in your dish but a lot of them require sauces or broths or paste made out of animal products. That is just how it is, they don’t have a lot of vegetables growing there so there food is dependent on animal ingredients. Also, ketchup does not go into kimchi. Ever

@@himalayannomads3986 now there are Chinese rajma too in market ...mimicking bhaderwahi rajma ...only difference is in Chinese rajma all rajma beans will be dark red and of same size ...but in bhaderwahi you will not get all rajma beans of same size or colour...
