    Country Style Ribs on the smoker. For my country style ribs recipe, I bought both Loin cut country style ribs and shoulder cut Country Ribs (or western style ribs).
    The first step is the seasoning these country style ribs. Layer on a combination of Salt, Black Pepper, and Garlic powder on all sides and follow that up with a good dusting of The BBQ Rub. (you can get it here: www.killerhogs.com/shop.html ) Let the seasoning work on the country style ribs for a few minutes while you start the smoker.
    I run my smoker for these country style ribs in the 275 range and use a peach wood for smoking country style ribs.
    After 30 minutes, the rub has draw out a little moisture from the ribs; and to allow some of the seasoning to penetrate into the country style ribs.
    First the country style ribs get smoked for 1 ½ hours. Half way through this process give each country style ribs a flip to ensure even cooking. You can check the internal temperature in the country style ribs at the 1:15 minute mark. When the ribs hits 150 degrees, that's about all the smoke these country style ribs need.
    Now you braise these country style ribs iIn a small aluminum pan pour ½ cup of pineapple juice and mix in The BBQ Sauce. (you can get it here: www.killerhogs.com/shop.html ) Cover the pan with foil and place it back on the smoker.
    Let the country ribs cook for another hour and check the tenderness and internal of around 195 degrees.
    At this point the Country Ribs are cooked so remove from the pan and the country style ribs back on the grate of the cooker. Brush or mop each side with The BBQ Sauce (you can get it here: www.killerhogs.com/shop.html ) and let the ribs caramelize for 3-4 minutes on each side. Once you see the sauce bubbling and slightly turning colors, your country style ribs are done.

    Another reason this is my favorite channel: dude broke down the difference between the ribs in the beginning perfectly. I’m a butcher and that’s exactly how we do it

    • @mossy723

      So if I wanted the second one what would I ask my butcher for?

    • @SSR6464
      @SSR6464 2 ปีที่แล้ว +2

      @@mossy723 second one would be pork loin ribs. Usually cut from rib ends. Tell them you don’t want the country styles from the butt.

    I started mine with dijon mustard and stubbs rub for pork, it has a little lime juice in it. I let it sit for about 6 hours in the fridge before smoking it. I smoked at 250 in the 30" electric masterbuilt for about 2 hours, internal temp was around 170. I had pomegranate vinegar in the water pan and used apple wood chips. I braised them in orange juice and Oakland Dust BBQ sauce I bought at the store. I sliced about a half onion up in there too. I let that braise for an hour and half and then finished them on the grill with a glaze of the Oakland Dust sauce. Came out pretty darn good. I think in the future I will be a little more patient and let them braise a bit longer. Thanks for all this great info on youtube. This was my second smoking adventure. The first was KC style ribs off your other video.

    Thank you for this info! Made these yesterday. Took a little longer because my smoker just wouldn't go above 250 F for any length of time. But the smoking then cooking in sauce was spot on. Used green hickory branches and leaves that a friend cut for me. We were so hungry by the time they actually got done that we forgot the last step of caramelizing back on the grill. But that didn't matter, they were SO delicious and tender! The pineapple juice was a great addition to the BBQ sauce, which I made homemade. I'm familiar with grilling on propane, but had never made a charcoal fire by myself, nor have a smoked anything before. And these were amazing!!! Thank you so much for your guidance and inspiration!

    This has become my "go to" channel for tips on smoking meat. Just really started getting in to smoking meat recently. I have charcoaled for many many years but smoking is a different animal and after failing big time on my first few attempts, I finally found myself putting some really tender, juicy and flavor packed meat on the table. Now I'm smoking meat a few time per week as it has become a hobby!

    I never would have even tried smoking these if not for your video. Man you can find these babies on sale and it's great BBQ on a serious budget. They're phenomenal. BTW...had to smoke some pork but for a big party, and the person in charge brought us pork LOIN...not butt. Completely wrong for pulled pork sammiches. So I smoked them for a bit and used your pineapple juice suggestion to braze them until tender and it came out awesome.
