    Love country style ribs because of their affordability and they are delicious when cooked properly. I just hope the meat industry doesn’t figure this out and jack up the prices like they have with other cuts of meat that were once cheap.

      @@hellbilly739 Yup, anything with rib in it's name is going to be jacked up. You can get a bone in butt roast and cut it up and get close to the same thing. Just a little bit more work.

    Country Style Ribs whether boneless or not have always been from the Shoulder...in KC and SoCal at least.

    Nice Job I just did these on kettle and I added water, it seemed to hold back bark formation, I was doing 225 degrees, I think that will only be for pork butts or brisket. I'm curios with Kingsford blue how many hours should you get using water, using sns I have the original deluxe. It's great if your attending cook. Shake at somepoint for airflow, 6 hrs seems to be my max starting with fiestarters seems to take close to 1 hrs to stabilize. Reason I'm asking I want to do overnight pork butt, I like the sns, but would my best maintenence free, no sweeping or shaking sns, be a 2x2 snake. This is for weber 22" kettle.

      Hye John, if you are cooking 225F and not opening the lid often you should be able to maintain that temp for around 8 hours with the water lasting around 5 hours.. If you are cooking 250 or higher the coal will burn through faster to maintain that higher temp.

    I must have to go to the butcher, as everyone else country ribs seem a lot cleaner/leaner than mine.

    I'm wondering how relevant videos like this will be in the future. It's harder to own your own home with your own backyard to have your own smoker, and more people are forced to rent due to insane housing costs. With that comes being forced to use a gas grill so that carbon monoxide won't go into other apartments in your complex. It's a damn shame to be honest, because there's no way a gas grill can replace a smoker or charcoal grill.
