    I made this today and I must say velverting the chicken is a game changer,i honestly couldn't believe how tender the chicken was and how i have never heard of this. Probably the best chow mein I've had and so simple. Thanks for sharing.

    Mom and son have a beautiful rapport and relationship. I live that mum lets the young son do his thing and supports him and not yakes over like alot of parents do. I love that he defers to her for expert advise and demos. I can that both love cooking and feeding people as well as being together.

    Yes please velveting and seasoning. Just had to say I've recently made your best version curry paste and my word its tremendous stuff. Im a chef nearly 26 years and love a Chinese takeaway afterwork. I've tried to replicate the curry sauce for years and never got anything like close to the real deal. A massive masive thankyou for that gem of a recipe. For anyone saying it looks a lot of work i beg you just push on and make the damn paste😂. When ever i open my fridge and see that paste I still can't believe i have the "actual" answer to my search for curry heaven🤯

    I want to say thank you so much for sharing your culinary knowledge across this channel. I just completed this recipe and it was absolutely delicious. I made sure to velvet the chicken (I used tapioca starch which seemed to work well) and I used all your recommended ingredients especially the noodles which are top!
    I added a scotch bonnet chilli and 3 large garlic cloves with the spring onions - I think this really unlocked the flavours!
    Next up is to try your sweet and sour sauce recipe, thanks for reigniting my love of cooking!

    These in depth videos are fantastic. Its fine copying a how to step by step, but to get people cooking properly they need the information behind why you do things a certain way.

    One of my favourite meals when I was in my 20s was Chow mein, curry sauce, fried rice, and chips in the Chinese restaurant. I used to frequent, I always wondered how they maid choe mein. Good video.

    Looks fantastic have to give this a go. Some takeaways serve sloppy noodles which I hate. I love a nice dry chow mein and with that Smokey taste which I now know you get from cooking the noodles properly. Great video thankyou

    Very good tips about rinsing noodles and not stirring too much. When I worked in a take-away we fried the chicken first and then put to one side to add back later. Then fry the onions and beansprouts until cooked then add noodles and seasoning. Add chicken at the end before serving.
    These days I don't add MSG but it's just personal choice.

      I’ve worked in a couple of takeaways that cooked it like you mentioned there, I always add MSG even in non Chinese takeaway food :)

    Another great video, guys! Love the chow mein vids especially, as it's something I'm trying to perfect. I have to improvise when it comes to adding the noodles though. I have all the right ingredients & follow every step... but if I add the noodles to my wok like you guys do, they just bizarrely fuse flat to the pan! Any idea what's happening? The only thing I have different to you folks is a proper 14 inch "School of Wok" wok (properly seasoned, of course). Many thanks in advance & keep up the great work!

    When Younger our chow mein always came with a light sauce, now however from the local Chinese it's dry and 'Caramelised to death!! used to be a fav, think I might try my own now!! Thanks!
