    I live in Germany where the UK/Irish style Chinese takeaway is non existent so your videos have helped me so much over here to fill the gap.     In Japan when making basic egg fried rice, we often use chicken oil instead of vegetable oil. We also add a few shakes of white pepper right at the end just before serving 🥢🍚 Love all your videos. You and your mum are a great team 👍

    I cannot fault this video. Lots of good detail. It’s a deep dive on egg fried rice! I did take your advice and get a rice cooker in the end. I have cooked perfect in various other ways but every now and then it goes wrong. Good consistent results from now on hopefully.

    I was taught that if you put sliced potato on the which will absorb the water and when you leave it to stand cover with a cloth. When I see it and after taste it, it was the most amazing rice I've had. Ever!! 😊

    Chilling the rice for a couple of hours or overnight was a game changer for me ✔I’d spent 40 odd yrs using freshly cooked rice and quite often ended up with a sticky gooey mess. Not a problem now though. It’s always these golden nuggets of information that make the difference between GOOD and GREAT ! Love to all 🥰🥰

    Of course you like what you like. You and your mum prefer slightly more moist rice. But you also leave the rice overnight to dry out a little. My method produces rice that can be stir fried in only a few minutes of resting. I can really recommend cooking rice in a microwave. I buy long grain 'easy cook' rice but also wash it until the water is almost clear. Swishing it round with my fingers, change the water and then repeat a further two times. I then put it in a microwaveable container with a lid. I add enough water so that it is just above the fingernail on my index finger (I have large hands like you, if i go to the first knuckle, then it's too much.) My current microwave is only 700W I think, so I do it on full power for 25mins, but years ago I had a 900w and it was just over 15mins I think. Basically you need to experiment with your microwave. But once it is cooked I leave it for 10 minutes, then fluff it with a fork. 9 times out of ten it will be perfect. If I feel it's slightly too wet, I'll fluff it and then leave it with the lid off and if its only a little dry, I add a handful of frozen peas! then put the lid on. The heat from the rice will cook the peas and the extra moisture will finish the rice. I've been cooking rice like that for over 20 years and have even been gifted an expensive rice cooker that I have never used.

    i like to add a couple of drops of veg oil onto the cold/chilled rice to help separate the grains before frying with the egg

    I started using your recipe a few years ago now, and at the beginning everything was great. My issue recently is that the rice won't clump at all. It looks ok fresh out the rice cooker, but the next day the rice is so separated and won't come back together even during frying.
    After this video I'm going back to basics, using some of the extra info I've got from your tips here and trying again.

    In the old days 60's and 70's we didn't have woks in Aust, we used our frying pans, well my mom did and taught me how to cook fried rice on that and it worked out great. Thanks for many great videos.

    I merely use basmati rice with a pinch of salt & tumeric, fry an egg or 2 in my frying pan ( after removing my salmon) & once scrambled nicely, throw the cooked rice in with olive oil fir 4 minutes.
    Love it.

    I usually make my rice dishes with long brown rice. I rinse it once in a sieve and then add more water with a stock cube dissolved in it, I cook it for about 15 to 20 minutes stirring only once. It usually comes out perfectly. If I make egg fried I was taught to add the rice to the sesame seed oil and pour over the beaten egg into it. Usually this works exactly how I like it. I will however take your recipe and see how different it is to my own. Thank you for the useful tips and advice.

    Hi guy's I've been subscribed to you for around 3 years now and have your cook books which are amazing and they are so easy to follow in layman's term, I use pearl river soy sauce and lucky Boat noodles and i treated myself to a so Asia rice cooker for £85 and never looked back but yes i like my rice fluffy sorry, I use an induction hob to get the heat and I'm regularly cooking for family and friends, also I've got a lot of your own products which again make such a difference, if anyone else reads this i would say buy the books (bibles) and start cooking great food, love to you and mum, 🍻

    i just got a zojirushi fuzzy logic rice cooker, and i wouldn't trade it for twice what i paid unless i can go buy a new one. totally worth the investment if you love rice, rather than just eating it.

    Bought a Russell Hobbs rice cooker a year or so ago and have never looked back, so easy to use (and to clean)
    My personal toppings are sliced spring onions, chilli flakes and a Siracha hot sauce drizzled over the top 😋

    Guys, I love your stuff, I've bought your book back in the early day and continue to watch you. Can I give one piece of feedback please; which is in videos like this one, where you say "add your salt" and "add some MSG" that you could mention the measurement your adding. I appreciate seasoning measurements are dependent on your dish ingredient quantity but an idea on the amount your adding in your paticular dish at the time would be great. 👍

    Very handy hints for the amount of water, and I never knew you used two different types of rice, I didnt think it would make a difference but it did!.... and now I'm rinsing three times 🙂

    I always add a bit of oyster sauce roysin soy when i cook my fried rice tastes divine but each to their own, Love the videos keep them coming.

    I bought a rice cooker last week and tried out this recipe and was so happy with how it came out! It tasted so much like the takeaway one :) I'm looking forward to taking some for lunch tomorrow! :D

    You don't need a fancy-pants rice cooker either. I got mine off Amazon about 4 years ago for £15 and it cooks the rice perfectly every time.

    I'm happy that what I already do lines up fairly well with this. And also confirm this vid does point out the things I had to learn myself and didn't quite get from other vids.
    Usually though when I am making fried rice it's to use leftover jasmine, and yeah it would be far too wet if it wasn't day old (or cooked with less water but the point is to kill 2 birds with one stone). It tastes better without being 100% jasmine too, the fragrance is wasted after a point.
