So great to find your video while looking for a cornbread recipe! Who knew I would enjoy such a charming, vivacious chef reminding me of my trip to Trinidad over 33years ago. Enjoyed traveling all over your beautiful country visiting beaches, markets, small towns tar park and volcano Vista's. Most memorable was participating in Carnival parade with our native friends. I made this for the first time using your . However, I used some cooking butter and oil at the beginning. I added cheese on top at the end. I didn't have celery and I thought it would have affected its taste. However, it was delicious. I offered a slice to someone who hated corn pies and he said it tasted delicious. Its the best corn pie he has ever had.
I made this yesterday for Christmas, and dammnnnnn it was seriously good. I will be making this very often! Next time I will swap the pimento for Madame Jeanette chili, which is close to a Habanero. I am also thinking of adding vegan chicken cutlets (stir0fry them first before adding. I wonder what it would taste like if you add some picalilly for a bit of acidity? Can't wait to find out!

I really thought that you were trying to pull a fast one on me, using creamed corn in “vegan” recipe!!!! But I did a Google search and to my surprise most canned creamed corn really is vegan! Apparently they use pulp from the corn to create the creamy texture. Thank you for the recipe and for teaching me something new today!
