Saw this on a competitive food eater’s video. His name is Joel Hansen and he was eating bbq and this was a side dish along with slaw made from green apples and cucumbers. I’m definitely trying your recipe!

My mom makes a wicked corn pie. That I consider the best. It’s so delicious. I may try your recipe for Christmas though, hopefully she doesn’t get mad at me for doing so. 😂 😂 😂
I like your tip of mixing some of the milllllk into the cornmeal first. I will do that from now on. I like to add my eggs to the evaporated milk and beat them. Then slowly add it and keep mixing. Instead of pouring the eggs alone into the mixture. I dont think alot of americans make this dish. I only learned about it 3 years ago and wish i knew about it when i was growing up.
Hi Jerene, I heard you mentioned about the use of flour in the recipe, so I'm thinking that bcuz some ppl don't like eggs, so, for that purpose only, I agree, they can use AP flour instead as the binding agent to hold the corn pie together. They can also use cornstarch to replace the eggs. For me tho, I love eggs aplenty, so the more, the merrier. 💕Lol 😘💕Bless up. 💕💕
Im american and alot of americans dont know about this dish. If u like mac n cheese u will devour this. First time i tried this i was in love. People who cant make stuffing right shud try this instead. Its very flavorful and satisfying , believe me!

I add eggs all the time as a binder but without eggs it might still hold together considering how cornmeal is 🙂
