What to Make With Leftover Almond Pulp

    *Almond milk (sweetened)*
    1 1/2 cups raw almonds, soaked overnight
    4-6 medjool dates
    1/4 tsp vanilla extract
    1 tsp cinnamon
    Pinch of salt
    5 cup of cold filtered water
    Place everything in a high speed blender and blend for 3-5 minutes on high. Strain through a nut milk bag, dish towel or fine mesh strainer. Store almond milk in the fridge for up to 5 days. Reserve the almond pulp for more recipes. If not using right away, store in the freezer for up to a month. It will last in the fridge for 5 days.
    *To make almond flour*
    Spread unsweetened or sweetened almond pulp on a parchment paper lined baking sheet and place in the oven to dry out. You can let it sit in there for a couple of days (while the oven is turned off), or you can turn your oven on to the lowest temperature it will go. Usually it’s 170F, and bake for 3-4 hours until all of the moisture is gone. After the pulp is nice and dry, blend in a food processor until it becomes almond flour consistency.
    *Almond streusel*
    1/2 cup almond flour
    1 TBS melted coconut oil
    1 TBS maple syrup
    Mix everything together in a small bowl to form streusel. To use, sprinkle on top baked goods before you place in the oven to cook them.
    *Double chocolate chip cookies*
    1 cup almond pulp
    1 TBS melted coconut oil
    2 TBS maple syrup
    1/4 tsp vanilla extract
    2 TBS sugar
    1 TBS shredded coconut
    1/2 tsp baking soda
    1/2 tsp baking powder
    1/2 tsp ground flax
    1/4 cup cocoa powder
    1/3 cup dairy free chocolate chips
    Form into cookies and place on a parchment paper lined baking sheet and bake for 35-40 mins at 350F.
    *Almond pulp hummus*
    1 cup unsweetened almond pulp
    1/4 cup chickpeas
    Parsley
    Cilantro
    1 tsp cumin
    3 cloves of garlic
    1/4 cup tahini
    1/4 cup lemon juice
    2 TBS chickpea liquid
    Salt and pepper to taste
    Blend everything in a food processor until smooth. Scrape down sides and add chickpea liquid if necessary.

    Water your plants with the soaking water. They love it! Use soaking water when sprouting too.

    Tried your cookies this Monday. Didn't add any chocolate chips but added some rice flour because my almond meal was still wet from making the almond milk and they are soooo delicious!! I'm about to make another batch, yummy!

    Skin comes off really easy if you just pinch each one after soaking them has a less bitter taste

    The cookies turned out to be really good! Thank you for the recipe. I modified it slightly by adding some ecceprsso powder and vegan butter in addition to coconut oil and they tested fantastic.

    I just made the cookies and they were delicious! I’m out of vanilla extract but I used almond extract and it went well with the almond meal.

    For the cookies did u use the wet almond pulp or the almond flour you made after drying the almond pulp? Looking for a recipe that uses the pulp without having to make it into flour first.

    To make almond it's soak overnight, btw before soak almond do u toast the almond first or just use raw almond ?

    Awesome video, question: Since no one in my home is vegan, how do these recipes taste? (I have a very picky husband) Do the chocolate cookies taste very chocolaty? do the recipes taste like almonds, because I have used almond flour before and every time I bake something it tastes nasty. Let me know your thoughts.

    hi can you advise.. i put my pulp though a second time with extra filtered water to get more milk its thinner not creamy as it might be... the milk gets warm is that ok?

      Chris Bickley - mine did too. I drank it with out problems. I think it’s okay as long as you refrigerate it within 30 minutes.

      Nennette Debs fruit sugar (fructose) is a great idea to replace the unhealthy sugar. And stevia, maple syrup, dates, banana, honey as well.

      You can also dry it in the oven to make it last basically forever. It does take few hours tho.

    Its OK to save the pulp and do nice stuff with it, I do it too when I use more filler in my recipies. But for your info there is nothing more then fiber in it. After you make your milk all the vitamin and mineral are now in the milk what is left in the almond pulp is ONLY fiber,its a good filler but nothing more. =)

    Damn. I’m about to something extra with this almond pulp. What might I do, you ask? Mm. Well, I might try to make the chocolate chip cookies. I fear that I don’t have enough leftover. I also lack patience. My chocolate almond milk was great! First attempt at it, which means a lot since my first attempts at foods are usually bad. I want to learn how to make so many plant-based goodies. Edit: totally subbed. I wish I could live in a vegan community where we live as organically and wholesomely as possible. It’s a dream world, yes, and it may perhaps seem cult-like, but real mf’s know why this would be awesome.

    Hey you know how when you juice almonds to make the milk, and sometimes the almonds/water mixture leaves like a goey after effect in the juicer??
    Could we use THAT, along with the pulp, stir it up and make Nut butter???
    Please say that's possible 😁😂

      Nisha Williams that’s totally normal! When you store it in the fridge and come back to it the next day, it’ll always be separated because there aren’t any fillers like store bought almond milk. Just give it a stir before you drink it.

    okay so I soaked my almonds for too long then I put them in a ziploc bag then I blended them and when I tried to strain them the almond pulp was so fine that literally the whole thing sifted through and I got no pulp? Should I use cheesecloth next time? Does it matter? the almond milk ended up not being great and I think it's because I soaked them for too long
