  • Chef Gianfranco Pascucci and the Mare Bistrot brigade show their skills on bluefin tuna, one of the most precious fish in the world. The idea is very simple: with sustainable fishing and by cooking all its parts, we can best valorise and preserve "the king of the sea" species. Fillet and belly, the most famous and inflated cuts, but also tail, heel, skin, fins, head and chin strap: for each part of the tuna a cooking technique and a recipe designed to make the most of the different flavors of the tastiest fish that the sea gives us.

    Certo che Pascucci, se non avesse fatto il cuoco, avrebbe potuto fare benissimo lo speaker radiofonico, per la sua voce, ma anche il presentatore televisivo, per la sua presenza scenica!

    Sono stato qualche giorno fa al Porticciolo di Pascucci,atmosfera elaborazione,studio dei piatti,personale qualificato che dire,il migliore ristorante di pesce stellato in cui sia mai stato,meno blasonato di altri stellati ma con più sostanza e metodo.
    Grande Chef e sua moglie Vanessa,unici!!!

      @@andreadibuccio7718 Non ci sono mai stato,vedendo i piatti da Romolo ,a parte la materia prima che sembra utilizzi roba di qualità ,non mi pare che ci sia la ricerca e lo studio del piatto che c’è da Pascucci.
      Piatti di Romolo ad esempio la Catalana o la crudités di possono trovare tranquillamente nella maggior parte dei ristoranti di pesce.
      Cosa diversa da Pascucci che ti propone ad esempio un sottogola di Ricciola o una triglia croccante con medaglione di foie gras,piatti oggettivamente non comuni.

    Il sottogola alla brace curato in questo modo dev'essere spettacolare! Che dire del resto?! Meraviglioso. Come valorizzare diverse parti del tonno facendo scoprire diversi aromi, consistenze e contrasti sorprendenti e misconosciuti. Insomma, come fare la differenza. Essere parte di quella brigata in cucina renderebbe orgoglioso chiunque

    The roll is NOT made with "bacon" - that is a mistranslation.
    _guanciale_ is the jowl, or cheek, of the pig. That's what those delicious looking thin strips are sliced from. The distinction is especially important to people in the Lazio region, where maestro Pascucci lives and works. For example, never suggest to a person from Lazio that pasta _all'amatriciana, or alla gricia, or alla carbonara_ can be made with bacon instead of jowls.

    Molto interessante come hanno trattato le varie parti del tonno. L' unica delusione è stata non vedere in azione le "katane" tipiche delle cucine asiatiche! 😅😅

    Da cuoco, e ancora prima da ignorante, a ancora prima da romano, non accetto il guanciale col tonno, parere personale, rispetto altri metodi e abbinamenti differenti dalla mia cucina ma semplicemente questo no, ci tenevo a dirlo, grazie della lettura e accetto critiche
