    The essence of Italian food. Very simple recepie (3-4 Ingredients max), but a lots of small steps and tricks that extrapolate the best of those ingredients. Magical.

    For English speakers, the curved pan is called a Saucier. The aluminum version is great for this purpose, because it is light and easier to manipulate for the wave than a stainless steel counterpart. A small high-walled wok will also accomplish this task.

    Sono stato da te e tuo fratello credo 15 anni fa, tramite l'agenzia di pubblicità per cui lavoravo, il cliente era acqua San Pellegrino, se non sbaglio, ai tempi proponevate il riso alla Pollock e il vostro classico riso al pomodoro, ma ci avete anche fatto una lingua con mela e scusa non ricordo altri ingredienti, cotta sottovuoto, mi ha cambiato la vita, nel senso che non avevo mai assaggiato niente di più complesso, particolare e raffinato. Da quel momento anche io ho cambiato il mio modo di cucinare e assaporare il cibo, quindi vi ringrazio per avermi aperto gli occhi.

    Ho vissuto a Novara e a Vercelli per diversi anni in entrambe le città. Trovo bello vedere qualcuno che valorizza ciò che si trova nella realtà della pianura delle zone dove ho trascorso così tanto tempo in una delle mie città di Italia, grazie davvero.

      @@thelambdafunctionil Nasi Goreng è saltato, non mantecato. Solo perché la tecnica al wok è simile nel movimento, l’obiettivo e il risultato sono totalmente diversi. Il Nasi Goreng è uno “stir-fried rice”, temperatura alta sulla fiamma finalizzata a caramellizare l’esterno del chicco, e dargli croccantezza. Il risotto mantecato è un’emulsione di amidi e grasso, con temperatura medio-bassa fuori dalla fiamma, finalizzata a dare cremosità.

      @@dr.bendover-md E mo' arriva il "dottore" di xvideos .. Non importa quale sia l'intento, se per far entrare aria nel piatto fai guarda un po; ... LO STESSO MOVIMENTO!
      E non venirmi a dire "ma col wok fai saltare il riso dando colpi anche col mestolo" che poi m'incazzo sul serio. Non importa. Non c'e' niente di unico nel introdurre aria e freschezza in un piatto fra saltarlo col wok, o fare "l'onda" spiattellando riso palesemente da tutte le parti. E' fisica

      @@thelambdafunction perché fare tutta la fatica che hai fatto solo per dimostrare nuovamente che non hai la minima idea di ciò di cui stai parlando? La *mantecatura* ha una finalità diversa dalla *saltatura* (“stir-fry”), a livello chimico e fisico avvengono fenomeni completamente diversi, nel primo caso si incorpora aria (“emulsione”, Google è tuo amico) nel secondo caso *no* , nel primo caso l’obiettivo è la *cremosità* , nel secondo è la *croccantezza* , persino il calore somministrato è diverso… praticamente solo il movimento meccanico è simile. Puoi rimetterti a sedere, caro. Oggi hai imparato qualcosa ☺️

    Per chi come me proviene dalle province di Pavia, Novara e Vercelli (sono Lomellino) il riso è materia "sacra", la stessa sacralità con cui chef Costardi divulga la sua conoscenza. Chapeau.

      Io lo trovo un alimento importante e a tutto diritto facente parte della dieta mediterranea. Nonostante sia originario dei Paesi asiatici il nostro clima del Piemonte è risultato ottimale per la coltivazione delle varie varietà di risi. Mi piace in tutte le preparazioni e devo dire che è uno delle preparazioni che mi vengono meglio, anche se il movimento dell'onda tipico dei Chef di professione non mi riesce proprio! Rischio di buttare tutto fuori del tegame...

      @@gilbertopro8897 ti serve un tegame adatto per saltare la pasta, ma con il riso ottieni lo stesso risultato se mescoli con un cucchiaio di legno. Quell'onda fa molta scena e tu sai che i cuochi moderni usano il marketing piu che la passione per la buona cucina.

      @@Chan-Lin-Tao Che poi "l'onda" è solo il punto del risotto, è come quando vuoi la pasta al dente, il risotto deve essere all'onda, che è solo una descrizione della consistenza cremosa del risotto stesso. Che poi faccia o non faccia l'onda col tegame quella è solo per scena.

    Questo è un VERO cuoco (preferisco cuoco a chef). Serietà, preparazione, semplicità e uso magistrale dei prodotti. Senza per forza fare un pomodoro che sembra un gambero e profuma di arrosto... L'idea del burro all'olio è interessantissima e peraltro replicabile a casa anche usando altri aromi e fantasia. Grazie!

      Yes, think of the process as something equivalent to when the French make sauces: they add chilled butter to the sauce and by movements of the pan, they make it creamy, it never completely melts. This is the same principle.

    Ultimately, cooking comes down to mastering technique. I really appreciate how the first risotto he made was only like three ingredients. I made it at home and tasting it for the first time was incredible. There is so much creative potential that can go into this dish! Thank you chef!!

      @@silvermediastudio unfortunately the perfect mechanisms has broken 65 years ago with the great acceleration of CO2 / heat rise and we are in a tremendous mass extiction since then. I'm not pessimist, this is the real thing.
