    This jollof rice looks great in taste and can feel the aroma. I am looking forward to making this at a weekend. My daughter wants me to cook this. Way to goooo.

    This dish is up my alley. I am vegan, but I need variety for my diet to work. African dishes are some of the most flavourful and healthy.

    In the Northern United States, tomatoes at this time of year are terrible. Instead of the fresh Roma tomatoes, could canned tomatoes be used instead. If so, how much?

      Hi! Totally hear you. I recommend using tomato sauce or canned whole tomatoes instead (I find canned diced ones to be too sweet sometimes). I would start by using about 1/3 cup of sauce, or replace the same number of canned tomatoes as fresh ones! My sister-in-law uses tomato sauce often (even in Nigeria, there are lots of spikes and troughs in tomato supply)

    Sounds and looks delicious -- but please tell, just HOW HOT do the 3 Habanero peppers make this dish? (I love hot and spicy, but not so much that the heat cancels out the other flavors of the dish. . .)

      It’s a spicy dish but since you’re infusing rice, I don’t find it overbearing. My suggestion, though, is to start by using 1-2 small habaneros to see how you like the spice profile and then increase it :) I’ll add a note to the description about this as well! Thanks for asking.

    Lol I totally would have made the mistake of popping the lid open before the rice was fully cooked...especially if I hadn’t eaten in the last few hours. 😋

    Would it still be hot if I took the seeds out of the habaneros

      It would make it much less hotter! I’d suggest adjusting down the number of habaneros to 1 to start with and then you can always adjust up the next time!

      Hi, I use 1 3/4 cups of broth for 2 cups of rice, since you’re also getting the liquid from the pepper purée.
