  • This delicious vegan, gluten-free Ethiopian Cabbage recipe (Atakilt Wat or Atkilt Wot) uses cabbage, carrots, potatoes, and simple spices for a flavor-packed meal. Ethiopian cabbage, carrots and potatoes are called Atakilt Wat, while Ethiopian cabbage and potatoes are called Tikil Gomen. I learned this recipe when I used to work in Addis Ababa, and it's approved by my Habesha friends!

      Omg. I've gone to an Ethiopian restaurant once and I was hooked. I had the vegan platter (beyaynetu) and I've wanted it again ever since. Lol. Everything was so flavorful.

      @@motophone8794 It's either Tibbs or Kitfo (which is more of a tartare, and usually with raw or lightly cooked beef, but cured with spices)

    My boss is Ethiopian and his wife was so kind and made a few dishes from me to try that were vegan aswell because Im vegan and let me tell you! 😅 food was so amazing!

    I'm neither vegan, nor vegetarian, but I don't mind having a meatless meal every now and then. I'm really excited to see recipes from Africa. I only had the opportunity to have that kind of food a couple times, but it was really good both times. I've been wanting to try some recipes at home.

    I followed this recipe almost exactly and it turned out great! I subbed white onions (because I think they work better when cooking down) added a little bit of water as I went, and included mustard seeds with a berber spice blend.
    Another trick I used was to make sure that once the carrots, potatoes, and onions were done, I flipped the skillet to make sure the cabbage was at the bottom for the final step. Thank you so much for sharing! You took the intimidating factor out of green cabbage and made it delicious :) !

    Ya know I toasted all the spices first and I added everything to my crock pot a cooked for 4 hours. It was so good there were no left overs my family practically licked their plates clean 😊

      @@UrbanFarmie it's so good and people always give it shit but whenever they do my first thought is "you probably hate anything that isn't a chicken nugget or cheese pizza" lol
      It is also a plant that unites the world, everything from broccoli to kale to bok choy and celeriac are all the same species of plant (Brassica oleracea) so its a plant that pretty much everyone was like hey this thing is pretty good

    I just made a soup version (minus the potatoes, add other veggies) of this dish the other day and had no idea! I put mine over chopped/boiled potato or over rice. What a perfect dish for the winter, or really any time of year. Delicious!

      Yes! Berbere adds so much depth of flavor to this recipe! I try to keep it simple and accessible in case folks aren’t familiar with the spice or can’t find it but if you have some on hand, nothing to beat it!!

    First, thank you for uploading the recipe. I cooked it today and both my wife and I liked it and will have it again. My wife doesn't like things too spicy, so I thought I'd be on safe ground with this recipe. To find exciting things to do with cabbage, which I love, is a bonus. I think cabbage gets a bad press and you just need to get creative! Greens roasted on a tray in the oven doesn't work for me. They're far better done on the stove top.

    I'm going to make this. And I'm going to make another version with some harissa for a northern African taste and then a third version with some berbere. I'm also going to use sweet potato instead of regular potatoes and see how that goes.

    I literally grow up on this type of food. My grandmother who is from Balkan (Europe) used to cook the very same dish except instead of turmeric and cumin she used bay leaves.

    This dish is eaten all across India. It is called Aloo patta gobhi. It is made with same ingredients and same technique.

    Thank you! This was delicious. I had a handful of cherry tomatoes and tossed them in too. I have a little trouble with your youtube channel though. The sound is so low that I have to put my volume at the highest setting, and then sit with my ear next to the speaker. It's the only channel I have trouble with, so I'm wondering if there's a setting I can adjust to fix it? (I'm useless when it comes to tech!) This recipe was definitely worth the effort, though It would help if you'd include the printed recipe.

    i tried your recipe today and must say the instructions were quite clear and easy to follow. What i did not enjoy was the flavour of the dish . I think the seasonings were bland. I used a dutch oven with a lid. Next time i will use a wider circumference dish with a cover because i think it would be easier to season with salt and pepper.

      Sorry to hear that. This is how it’s traditionally made but if you want, you can add some curry powder and/or red chili powder while cooking to add more seasoning and spice!

    I cook with NO OIL…I use veggie broth or water only….it works fine and I haven’t had any issues.. I did this after watching a video about how oils are processed/made…😵😳😡 Some are just Poison for our bodies so I just cut ALL oil out! I made this …without the oil and WOW DELICIOUS ! I made Naan to go with it and sausage for my carnivorous hubby ! Excellent! Thank you!

      I responded to another comment here about making it oil free! You’d want to start by sautéing the onions in broth, and then you can add the rest of the spices along with the vegetables and the water later. This way. it’ll be flavorsome and not burn!

    We love Ethiopian food. There isn't a restaurant near us so we have to drive about 45 minutes to find one but oh, is it worth it. I don't know the names of the dishes because we always get a vegetarian sampler platter. The three restaurants that we go to have a little variation but mostly a variety of lentils, the greens, the cabbage potato, a little salad and one has a beet dish that the others don't. I wish I knew the names of them. I love the spicier lentils and the injera is out of this world! I tried to make it several times but it just wasn't even close 😔. I'm sure going to try your recipe though. Thanks for sharing it!

      So, the common dishes are Shiro Wat (the smooth chickpea flour stew), Misir Wot (the red lentil stew), Atakilt Wat (this recipe!), Gomen (the collar greens), and then usually a Habesha salad (which is a simple house salad). Hope that helps!! I'm in the final stages of testing an Injera recipe that won't take 96 hours to make, so stay tuned for that!

    Thank you so much for this recipe. I love cabbage and ethnic recipes. You sound like you've had a very interesting life. I'd enjoy learning more about your life in Africa. Do I detect a bit of an Indian accent? I live in the Sacramento Valley in California and we have many Indian farmers, most are Sikhs originally from Punjab.     What are your thoughts on adding some higher protein ingredient to this (I'm thinking lentils, canned beans, or maybe even tofu)? I know that starts to stay away from more traditional preparation.

      You can definitely add more plant-based protein to the dish, but the specific protein will determine manner of cooking. For instance, you might be able to add lentils along with the potatoes and carrots and increase the liquid to cook them alongside the veggies; I'd probably add the canned beans along with the carrots. Tofu might be the one that might be a bit of a stretch (since you'd have to likely season and cook it separately). Hope that helps!

    I have a question. You said to add 1 tsp turmeric to oil and then after adding root veggies said to add the rest of the turmeric. You had only listed 1 tsp of turmeric in the ingredient list. Am I needing more?

    This looks wonderful! I’d love to make it for my mom but she can’t have oil. Do you think this would still be good with a water sauté?

      You can definitely make this without the nitter kibbeh (the infused oil at the start!) I suggest starting by sautéing the onions in water or broth, and then adding the spices (I find that it burns otherwise). Since you cook the veggies with all the spices, they’ll taste just as good even if you have to leave the oil out :)

      Hi Elena, I haven't tested it with coconut milk, but I don't see why not! As long as you keep the amount of liquid the same, the vegetables should cook through. I would just keep an eye on the dish though (in case the coconut milk is absorbed faster, you might want to add a bit more water). Let me know how it goes!

      Hi, yes, sorry if that was not clear - this recipe needs 2 teaspoons of turmeric. One at the beginning when you make the infused oil, and then the rest (1 teaspoon) when you add the vegetables.
