Strawberry Chocolate Daifuku Mochi🍓🍫

    HAPPY VALENTINES DAY! we're levelling up the condensed milk chocolate truffles recipe we made last week and we're making strawberry condensed milk chocolate truffle daifuku!

    Makes around 10-12 strawberry chocolate daifukus
    Ingredients:
    - 225g condensed milk
    - 75g cocoa powder
    - strawberries
    - 150g glutinous rice flour
    - 200g water
    - 65g sugar
    - katakuriko (potato starch)
    Method:
    1. add condensed milk in a bowl, sift 1/3 or 1/4 of the cocoa powder in, whisk until smooth, repeat sifting in cocoa powder gradually and whisking together until combined. (use a spatula in the end if it is too hard to whisk together)
    2. place chocolate in a reusable bag or container and flatten into a rectangle or square. Chill for 1 hour in the fridge.
    3. wash and dry the strawberries, and remove the steams
    4. Place chocolate truffle on top of a pan dusted with cocoa powder, sift more cocoa powder on top, and cut into sections around 25-30g or big enough to wrap around a strawberry
    5. wrap the chocolate around the strawberry and set aside (cover and place in fridge if you will take some time with next steps)
    6. in a heat proof bowl, whisk together glutinous rice flour and sugar, then add water. Mix until no lumps of flour. Steam for 15 minutes on med heat, mix around, then continue to steam for another 15 minutes or until cooked.
    7. place the mochi on a surface dusted with katakuriko, then dust more katakuriko on top. Separate into sections big enough to wrap your chocolate strawberry.
    8. With a rolling pin or hands (dusted with katakuriko), flatten the mochi into a circle while it is still hot, add more katakuriko on sticky sides if needed, but dust off the excess
    9. wrap the mochi around the strawberry and pinch the ends of the mochi together to seal. Dust any sticky sides with katakuriko and brush off excess
    *mochi is best served the day of, however if you need to store, keep in an airtight container and place in a cool area (NOT in the fridge, or it'll harden)

    If you want to Cut the strawberries to make the balls smaller do you cut them before putting them in water with salt or after?

      Hmm I don't recommend cutting it in half because it may release a lot of moisture. however you could soak in salt water then cut in half. best to use smaller strawberries though maybe

      Thank you! Unfortunately there is no substitue, regular rice flour doesn’t give the same chewy stretchy texture and results are too different and not recommended 🥺

    I made the Daifuku Mochi today. Not gonna lie, i had a few problems making it because it was so sticky :D They are not bad, for my taste the cocoa powder makes it a little bit bitter so next time i would add a bit sweetener to the cocoa condensed milk mixture. But otherwise they were pretty good :)

    Can i use powdered sugar instead of potato starch ? For like, less of a flour taste and more of a sweet sugary taste?

      I haven't tried with powered sugar before but uncertain if the sugar will dissolve when the mochi is warm making it more sticky?

      It’s bitter alone! But sweetened condensed milk is quite sweet so it balances out ☺️

      unfortunately no :( normal rice flour won't be stretchy and can't create the same texture as mochi
