I converted all measurements to your standard: 320 ml warm whole milk = = Approx. 1.35 cups or 11 fluid ounces 8 g instant yeast = 2 teaspoons 3 tablespoons of sugar 1 egg 600 g wheat flour = 20 ounces = 4.8 cups 10 g salt = 2 teaspoons 80 g melted butter (cooled down) = 5.5 tablespoons or 2.7 ounces 1 egg (for brushing) 2 tablespoons of milk (for brushing) Preheat the oven to 200°C = 390 °F Since it's an international channel, I can't cover all measurements, they differ so much across countries 😅but I can always convert them for you if needed. However, by wheat flour I understand ground and clean flour (not whole wheat or wholemeal flour). What delivers best results in this case are flours type 0 or 00. Hi 😃, there could be a few reasons why. Make sure your milk temperature is not higher than 104 F. The same goes for melted butter. I recommend using a kitchen thermometer. Did you use instant yeast? Contrary to instant yeast, fresh yeast and active dry yeast that needs time to activate when you combine them with milk. If you used one of them, you need to wait 10 min to let the yeast activate (start working). Try to avoid drafts when the dough is rising. The yeast dough doesn't like sudden changes in temperature. I hope this helps. If not, feel free to ask further questions ☺.

I’m watching from the United States, in the state of Tennessee. I wish you had cut all the pieces at once so I could see them all at once. It looks like when you started cutting you only made one cut to the smaller piece but ended up with three pieces of dough? I think you ended up with eight layers for each roll. Could you confirm?

What is the percentage of protein in the flour? In the UK flour is graded differently to other countries. Wheat flour could mean a number of wheat flour types from plain flour 9-11% and bread flour is 11-13%. Thanks.

I’m watching from the United States, in the state of Tennessee. I wish you had cut all the pieces at once so I could see them all at once. It looks like when you started cutting you only made one cut to the smaller piece but ended up with three pieces of dough? I think you ended up with eight layers for each roll. Could you confirm?
Hello ☺, I made a small mistake while editing the video. The piece of dough that I add at 4:33 is actually the piece I cut off at 4:49. I'm so sorry for the confusion. Thank you for helping me improve my channel 🤗. I will keep all your suggestions in mind and try to do a better job at filming it next time. At the time, it made more sense to edit the video the way I did and show all the pieces separately. Again, so sorry for confusing you 😥and I hope you won't give up on my channel because of that. What is the percentage of protein in the flour? In the UK flour is graded differently to other countries. Wheat flour could mean a number of wheat flour types from plain flour 9-11% and bread flour is 11-13%. Thanks.
Go for the bread flour with 11% or more 😉
