Très déçue, les croissants n’ont pas levé, le beurre s'est rependu sur la plaque.le fait de mettre au congélateur avant que la pâte lève est une mauvaise idée .c'est raté

It almost became a brioche, for this not to happen it is good to fold the dough, then chill it and then roll it into croissants. Then it will have a spiral inside. Otherwise, I baked using this recipe and they came out well. I baked 20 mins one side at 170°C and then rotated the tray and baked for another 10 mins

You are using cold-water.. most chef recipes they using hot or little warm water.they said yeast will activate early. I will try your method it's new for me

My guess: if it was cold it would not spread so easily. But, too soft it would probably also not be good. So probably somewhere in the middle...

Bisa di istirahatkan dulu 20 menit supaya adonannya lebih lentur dan mudah digilas tanpa perlu masuk freezer 🙏
