    I just love how much in-depth information the narrator gives us on filet technique and in-depth info on the equip used...I love how they give the Sushi masters credit for his/her talent and where I can go and buy this product at the restaurant.

    I've watched this video twice and commented once before. At my third viewing, I am even more impressed with this showcase on filleting skills I have been a professional chef for 12 years, and the skills put on display here are just phenomenal. A+++ once again.

    I seen quite a few other vids of other chefs doing this but this one is a brilliant chef, he cut it so well done that there's barely any meat stuck at any point at all. The others one's i seen does a good job but not as good at this one as the others have a bit more flesh stuck to the fish. This chef here if he is slower than the others doing it is only a little bit if at all slower doing the cutting but far cleaner with a lot less flesh hanging onto the bones.

      For someone who doesn't know, some people eat raw beef and raw pork, yes raw pork (in German it's called 'Mett'). As long as they're safe to eat, then there's nothing wrong with eating raw meat. Have a nice day.

      U losing a lot. You have to eat at least salmon and tuna sashimi. As a Turkish, my mom was finding it disgusting. Now she is forcing me to go places for sushi.

    What really impressed me is the precision and care in which he handled the fish. It was almost as if he was treating the fish with respect in my opinion. The final product was carefully placed not just thrown onto a tray and really nothing was wasted. Bravo.

      Flounder is a joke compared to halibut, I can guarantee if you try halibut you will never want flounder again.

      Natalie Harris same here because it helps me filet the fish I catch but taking out the squid from it stomach then eating it is nasty as fuck. Is there anything they won’t eat?

    Great presentation.
    For your information most wild seafood should be frozen prior to eating raw. Maybe that's farmed 'Halibut'. Its actually a sole/flounder.
    Non-frozen wild raw halibut carries parasites. Guaranteed!

    On top of flat fish like Halibut and Flounder tasting so good and being such a stable white fish the yield of meat to waste is higher than many fish but if you ever get it from a restaurant fried filet then always ask for dark side because look at this fish you get much larger filet from that upper portion.

    When my brother came back from the sea, he always got some flat fish like this. And I actually cooked it sweet and sour most of time. 😂 Sometimes, I steamed it. I never tried to make it like this. 😅

    Halibut or in Bahasa Indonesia called 'Ikan Sebelah', is kind of fish that mentioned in Quran due to Prophet Musa (Moses) story while he was searching for teaching from Prophet Khidir's knowledge (Al-Kahfi 60-82).
    In his journey, they (Moses and his assistant) bring fish as a provisions, and have had eaten half part of fish. And the other half jumps back to the sea at the place that God informed him earlier as a sign that is the place Moses would met Khidir.
    That half fish is now known as Halibut or Ikan Sebelah.

      I wouldnt eat halibut sashimi ever! They lay in the ground and worms live in them you can pick them out of the belly fat. Halibut is good but its the pig of the sea. Scrub it all you want it will still give u worms. Eat salmon or tuna sashimi only.
