Halibut and Flounder are so weird looking but by far my favorite tasting fish. How they evolved to look like they got ran over by a truck is beyond me.

As a flatfish grows into an adult, one eye migrates across its head and onto the “top” of the body, but its mouth stays in the same place-this gives flatfishes their distinct sideways look. Once the eye metamorphosis is complete, the fish lays its blind side on the sandy bottom.
As they mature, the bones on the left side of the skull grow significantly faster than on the right side, so the left eye and nostril slowly migrate to the right side. The jaws, however, do not change significantly, so the adults bite sideways, from right to left.
well they hide under the sand, the ones up north in the waters around Denmark where I live, they are not brightly colored, they are gray and speckled to look like the bottom they are on.

I have never seen a golden halibut in the wild, love the work being done at Haeyon to produce them enmasse, safe sustainable & delicious.
thats the difference between farm raised and wild. most of time farm raised fish or animals have a way crappier taste to a wild caught one. but with farm raising you can raise almost anything cause you can just make the perfect synthetic environment for whatever you want to raise
Halibut and flounder is different fish bro...halibut mostly bigger than flounder and thicker skin than flounder..

What an ignorant comment . Do the fish look like they are incredibly overcrowded ? Live 24 hours a day in total darkness to reduce stress from overcrowding, except when they are fed rock- like chunks of food with antibiotics and chemicals poured over their food to prevent fungus and diseases and then you eat their flesh , full of these chemicals. Yea , that's beautiful.

I really, really love how the Koreans present food. Both the individual dishes as well as the fact that they have so many individual little dishes. It makes you feel like a king.
Funny story, if you know the Korean Boy Band BTS, they were on the Jimmy Fallon show and he took them to a restaurant for pastrami sandwiches. The food came, it was just the sandwich. All of them looked at their leader and said something. The leader turned to Jimmy and said “where are the side dishes?” Jimmy had no clue. In Korea you always have “side dishes” with your main course! I love kimchi myself!!

But yeah I'm like you, I'm used to seeing vids where they just start processing with the fish very concision. The octopus ones are horrendous because you can see the fear/pain. I really don't see why people wouldn't want to minimize suffering in processing when it's easy to do so. smh
