The smell of plucked and rubbed fenugreek leaves is, to me, the smell of India. I was cabin crew for BA for 31 years and spent so much time there. The one smell that sticks in my mind is fenugreek. I used to love my night stops in Mumbai, I miss it so much. By the way, Tesco always have dried fenugreek if anyone is having trouble finding it.
I'm unable to buy fresh methi where I live, so I grow my own. I just soak whole fenugreek seeds in lukewarm water for a bit, then grow them in a pot. There are plenty of how-to videos, and it's pretty easy, The next time I grow some I'll give this recipe a try - it looks delicious!
I can't get leaves either. I'm going to try to grow them as you just suggested.
Are you using fenugreek seeds bought at the grocery store or specifically a grower's variety like from a garden center? I ask because typically "spice" seeds are dried to a point that they're no longer viable to grow, or so I thought. I'd love to try growing my own too if the ones from the grocery store work with soaking. Thanks for any tips!
@@benellis6677 I used organic whole fenugreek seeds I bought at my local natural foods store. Maybe Frontier brand? I don't recall.

You cook with me several times a week here in New Zealand, my lovely man walks in the kitchen and says “Chetna’s here” and knows dinner will be fantastic.😊❤
I'm making this today. The chicken is in the pot now. I had errands to run after I made the tomato and onion mixture, so it had plenty of time to cool off. I left the chicken marinating in the yogurt mixture for 5 hours. I was lucky and was able to get fresh fenugreek! I am really looking forward to this for dinner. The house smells amazing!
Update: My adult son dropped by tonight and ate the curry. He LOVED it! Thank you so much for sharing.
The purees are so good...makes it more jucier.
I buy frozen fenugreek from the Indian supermarket in the freezer. I have never found fresh for sale here (Melbourne) though some nurseries sell seedlings to plant. I recently bought a small curry tree recently and it's doing well. 🤞

I work at a spice shop, and we have found that the fenugreek seeds germinate very easily! Grow your own!

This past weekend, my local Indian grocer had massive bunches of bright green methi. I purchased a bunch, washed it off, threw it in a colander, and placed it in the back of the fridge to remove the moisture ... and then today I realised I'd forgotten about it. 😶 Absolutely dried out and wasn't worth much. I'm heading to the grocer this weekend in hopes of another fresh bunch so I can make this dish on Saturday. Thanks for the suggestion!
