Quick and Delicious Ramen Noodle Pad Thai at Home - Easy Ramen Recipe

    Ingredients:
    3 packages of instant ramen noodles
    1 cup pre-cooked crunchy breaded butterfly shrimp
    1/4 -1/2 cup chunky or creamy peanut butter
    3 tbsp low sodium soy sauce
    1 tbsp brown sugar
    1 tbsp lemon juice
    1 tsp ground red pepper
    1 tsp garlic power
    2 tsp toasted sesame oil
    2 tbsp olive oil
    1/2 cup thinly sliced sweet peppers
    5 oz or 1 small can of drained water chestnuts
    1-2 cups of baby spinach
    1 Tbsp dried onion flakes
    1 tsp powdered beef bouillon
    2 large eggs beaten
    1-2 Tbsp of toasted sesame seeds (optional)
    1/4 cup reserved starchy water
    Instructions:
    -Boil water in a large saucepan, cook 3 packages of instant ramen noodles according to package directions about 2-3 minutes until tender but not soggy, Discard the seasoning packets.
    -Drain most of the water from the noodles, reserving ¼ cup of the starchy water. Set aside.
    -Place in the oven or fry 1 cup of crunchy breaded butterfly shrimp. Follow package directions to cook the shrimp
    In a medium size mixing bowl, mix together ¼ cup chunky peanut butter, 3 Tbsp low sodium soy sauce, 1 Tbsp brown sugar, 1 Tbsp lemon juice, 1 tsp ground red pepper, 1 tsp garlic powder and 2 tsp toasted sesame oil, add the reserved starchy ramen water and combine well until smooth and creamy
    -In a separate saucepan, Sautee in olive oil about ½ cup thinly sliced sweet peppers, 5 oz or 1 small can of drained water chestnuts, add 1-2 cups of baby spinach and cook until the leaves are just slightly wilted. Set aside.
    -In a large skillet, add 1 Tbsp olive oil, mix in 1 Tbsp dried onion flakes and 1 Tsp powdered beef bouillon.
    -Beat 2 large eggs and scramble until cooked through. Turn off the heat, then add the cooked ramen, along with the peanut sauce mixture and gently toss to coat.
    -Garnish ramen dish with the sauteed sweet peppers, water chestnuts and spinach, add the crunchy breaded shrimp.
    -Sprinkle 1-2 Tbsp of toasted sesame seeds (optional)
