i didn’t realize pecking house had fried rice on its menu! the food there is great and the fried chicken tastes incredible and even stays crispy after being in the fridge. if you ever have a chance to visit get their butter miso turnips, too - they’re weirdly addicting.

I watch hundreds (thousands) of cooking videos. Eric might be one of the most genuine, humble and most of all, easy to follow presenters I have seen! Question: what kind of oil is used?
I always make fried rice with a combination of dark soy and oyster sauce. For me, a fine mince of garlic is an absolute must - and tho not too much garlic - as well as adding enough oil so as to properly coat the individual kernels of rice (giving the rice a lustre/shine). White pepper to finish imparts a nice smokey heat. Beans sprouts and spring onion for garnish. Don’t care for peas in fried rice but carrot is perfectly OK veg! Should we not have our own variations?
I whisk a bit of soy cause into the egg, too, then set the egg aside after scrambling and add it back into the rice off the heat. I also like to wilt finely shredded cabbage in the wok before adding the rice. Lastly, I add a bit of finely minced ginger to the soy sauce. Trust me.
great techniques , i learned a lot about Chinese cooking in this video., I have a question, in veideo time about 9:35 chef talking about emulsifying egg with rice , If we add egg to the rice rather than cooking egg before for adding rice. How emulsification can happen between rice and egg ? i am just curious to understand it better .Thank you in advance 😊
Fried rice was the first thing I to make. I like to really loosen it before I refrigerate it. I take it out about half an hour to an hour before I want to use it to let it come to room temp and I check for lumps again at that point. Lol I don't put in soy sauce. My grandparents owned a restaurant in NYC ages ago so I learned to love their food early on.
I grew up going to Peking House, that's crazy. Now I guess I'm going to have to go out to Brooklyn to check out Pecking House xD Eric don't be afraid to open a restaurant back here in east Queens!

Seasoning is everything in cooking 👌. If your heart isn’t in what you’re cooking, chances are it’s not going to taste as great.
