- Today I am making corn pudding casserole my way. I like to add crispy bacon and fresh jalapeños. You can make this without the added ingredients and still have a wonderful holiday side dish. This is gonna be good!

INGREDIENTS
1 box of Jiffy corn muffin mix
4 large eggs
8 oz sour cream
1 stick of melted unsalted butter (113 g)
15 oz can cream-style corn
15 oz can sweet corn kernels
6 to 8 oz cheddar cheese
12 oz bacon
1 to 2 large jalapenos
8 x 12-inch baking dish

I knew I wasn't the only one! I add onions and instead of normal corn I use flame roasted corn. SOOOOOO delicious!

I always strain and keep bacon fat. I did use some once to make tortillas. Yummy! And yes that casserole is delicious.

I like this recipe a lot. I almost always use fried chicharon I get from a local Mexican butcher shop. But I loved this also!

If you have a cast iron skillet, preheat it in your oven, then grease it with your reserved bacon drippings before pouring in your batter. You will get a nice crispy fried crust on the bottom and edges as it bakes in the oven. Don't bake it as long and extend the cool down time to 20 minutes as the cast iron will retain heat for a longer period of time. Optional serving suggestion is to sprinkle more cheese on top as it cools 🤤👍
Bacon grease for making refried beans….the best!
